I applaud your caramelization of the walnuts and mushrooms because it adds another layer of flavor…..as a side note, mushrooms have a lot of umami to add and powdered mushrooms can be added to a lot of food instead of things like MSG…..I am not vegan but appreciate robust vegan foods, thank you.
I tried your recipe. The walnut mince needs to mix with a little oil to help the seasonings develop before cooking. Also some finely chopped carrots and sun-dried tomatoes (soak first)
Although I have not seen these recipes, what I take from this video is that finely cut or chopped mixture of walnuts and mushrooms can make a ground-meat substitute. I think many of us can do this and find success.

Thanks for the recipe. I wish i would have hand chopped the peppers and onions like you showed, i put them in the food processor and they got too mushy.. won't make the mistake next time! I put this inside lettuce wraps and it was good. I didn't soften the walnuts in a jar.. another youtube video showed boiling the walnuts instead of letting them soak.. seems faster.. not sure what the better method is..

The other night we made a variation of this with just walnuts, cauliflower & garlic for a teriyaki rice bowl. It turned out pretty good, but I was looking to switch it up a bit to make tacos and this seems perfect. Looking forward to trying it out, thanks for the recipe
Thank you for this recipe! It came out great and my skeptical family loved it! We're trying to transition to vegan so this was a major change in the typical taco recipe. I followed your steps, but made my own seasoning and added 1/2 water and let it cook with the lid on for a few extra minutes. Even better the next day.
You could also put the walnuts in a glass baking dish and cover with water, then place onto the oven at 200 deg f overnight prior to processing them. It turns out very well.
I found that making my own taco seasoning isn't difficult at all. Pick up Limes has a video on it. Maybe Kulture Kitchen can make a video on Taco Seasoning.

Garlic is crucial in latin dishes💞 Add a base umami flavor to the walnut mix; I like to use vegan beef style bullion plus my secret also a dash of vegan chicken style bullion. Then, also add: Cumin Smoked paprika Mexican oregano Pepper Chile powder A tiny pinch of raw sugar or any desired sweetening. This doesn't make it sweet , it just adds another complex layer of carmelized flavor when making vegan foods. You can also add some finely chopped Serrano or jalapeños if like a lil heat.
