My wife was a pom pom girl and we ended up hanging out with nearly the entire football team and this 350-pound lineman would order 3 and then he would watch everyone like a hawk to see if he could devour the last 1/4 of yours. Those are truly great memories and my wife and I were talking about crashing SCC's cafeteria on a random Wednesday to see if they still make them. Really great episode Mr. Witt because no one does a chimichanga quite the way they are done in AZ! Also, great tip on using the backside of the wok to make burrito sized tortillas!.
Creme the lard, it makes for a very soft pliable tortilla, chimi has to have that barbeqoa sauce, diced onion and chopped cilantro mix, beans/rice a must. Sonoran style.

this is a style of chimichanga i have had in Nevada, it was on a military base, for the special forces. the mesh hall smelled like a Jimboy's and it was heaven, they called normal burritos, donkey bullets. the reason for that, too many people over stuff them, making it a pain it the butt to eat. the other reason, too many people over season the meat, burritos like any other Mexican street food does not need to smell like a Doritos bag.
