• Easy Chole/Chana masa... - Easy Chole Masala
• Easy & Tasty Chana Mas... - Chana Masala
• Dhaba Style Paneer Mas... - Paneer Butter Masala
Ingredients
Wheat Flour -1/2cup
All Purpose Flour-3/4 cup
normal Water- 1/2 cup
Salt-to taste
Rice flour -
Wheat flour -for dusting
Oil-
Method
In a bowl add both flours and salt , Mix well..
In a bowl take water and add this flour mix little by little
and make a very soft dough ..
Cover it with a wet kitchen cloth and allow to rest for 20 to 30 minutes ..
Then again knead well for 1 minute..
Make small balls of equal size..
Take a ball of dough and make a small disc .. Take another ball and make another disc of same size ..
Both of them should be equal .. means u need two dough at a time to make rumali roti
Spread some oil on top of the first dough and then dust with some rice flour ..
Do the same with the second dough too..
Then place the second dough on top of the first one and press the edges and dust in atta and roll to a big thin rotti ..
Heat tawa(important part is that the tawa should be very very hot ) and place the rotti ..
When it starts puffing up ,turn it on to the other side and cook ..
Take the roti and have to separate into two … Then u will get two rumali rotis..
Fold into 4 and keep in a bowl and cover with a kitchen towel ..

I tried this recipe and it came out well.It's the easiest and fastest method for homemade rumalis. However I would love to see a Punjabi kulcha recipe too. I tried the keema stuffed version from other north Indian recipes but wasn't satisfied. But I hope will get a better recipe from you. Provided you get sufficient time to work out for the perfect one.
