as always, entertaining content, thank you :) One tiny critique tho - Never just remove mold from watery stuff as the mycelium (the "roots" of mold, the pelt on top is actually just the flowers of the fhungi) will have penetrated deeply into the thing. It's safe to do for not too watery stuff like hard cheese but i really really whouldn't recommend it for vegetables and fruit in general, even less tomatoes, cucumber, berries etc.
My mum always did that with jams when I was a kid (they were homemade so shorter shelf life and sometimes they had mold after opening). I only learned as an adult that mold penetrates into the whole thing. :(

It will make a paste that has the punchy bite of fresh garlic but with a fraction of the work. Be gentle tho! It’s super strong. Love your videos (even though I’m concerned for your grocery store)

Onigiri fell apart because the rice was too wet after seasoning, and the leftover rice was too dry to stick properly; fresh sushi rice would be ideal. I'm not sure I've seen you make it so here's a quick guide: 1. Rinse short grain white rice in strainer until water runs almost clear, under cold water, gently stirring rice as you go. Should take about 1-2 minutes. 2. Allow to rest in strainer for around 20 minutes in humid weather above 75F, around an hour in dry weather 50F or lower. This allows the water to soak into the rice's center and helps achieve an even cook at lower water content. 3. Place rice in high-sided pot and use an equal volume of water as original rice measure. I usually use two cups dry rice for two people, which has leftovers from breakfast fried rice. 4. Place pot on medium-high to high temperature and allow to come to a boil uncovered. Once a boil is reached, immediately turn the heat down to a simmer and cover the pan, allowing to cook another twelve minutes before removing from heat. 5. Allow to stand at least ten minutes to cool, though I usually wait 20. This allows the rice to retain heat and even its hydration. Keep the lid on during this time. 6. When just warm enough to handle, dump in some sushi rice seasoning vinegar and, if possible, transfer to a damp towel in a bamboo or similar porous basket, covering the rice. I usually just use a big tupperware and cover with a damp towel. Make sure to fluff the rice to make it easier to work with later and evenly distribute the seasoning vinegar. If using the basket, this can be done in the pan. 7. Rice should be ready when it's just at or slightly above body temperature. Form into desired shape or work onto your sushi nori with hands dampened with cold water. I'm putting this in the cookbook I'm writing.
