      He has that same sweet, uplifting chilled out vibe that Maangchi has. It's a lovely energy to absorb and be around, that sort of self-propelling, constructive, goofy and easy-going attitude. Great way to turn mountains into molehills, lose the anxiety and realise life really is good. Of course I have no idea what he's like in person, I'm only going by the way he presents on this channel. One of the best Korean cooking channels out there, no question.

    Do one of these for other uses for doenjang (or however you spell the soybean paste)! I have a gigantic container as that was the only size sold (even bigger than my gochujang container) & I don't have doenjang jiggae often.

    Having had experience with gochujang and pepper flakes before, I knew I would have to cut back severely in the amount of each in your Gochujang Jjigae recipes, so I used about 1/3 of each ingredient. I didn't have any zucchini in the house so substituted Asian eggplant, and it worked out beautifully. I didn't have fresh shiitake mushrooms either so I reconstituted 5 small dried ones. I am very happy to say that my result was delicious and I had used just a wee bit more pepper than I would have preferred. I will definitely make this because it was truly delicious. My only problem with it was that there wasn't enough liquid at the end to put over my rice. Next time I will use more. Thank you for your consistently delicious recipes that are very easy to follow.

    So I didn’t know this when I first started cooking with gochujang, but there are heat levels on the tubs. I got a level three tub one time and made tteokbokki with it (the recipe also had red pepper flakes). I almost killed myself and my friend with how spicy it was. 😂 If you are buying gochujang for the first time and are slowly getting into spicy food, then make sure to look at the spice level which looks like a little meter on the bottom. It’s something that can get overlooked easily with all the brands, so make sure to look for it.

      @@Nv_Rc3 Truth! I learned that adding sugar cuts spicy, so if you ever add too much add sugar a little at a time until you aren’t dying haha. 😅

    I have the opposite problem… I put gochujang on random stuff like hotdogs, crispy potatoes, peanut butter sandwiches, sautéed cabbage, grits, cheesy mashed potatoes. It’s just so delicious! Thanks for explaining some more conventional ways to use it. Love your videos!

    A&C, thank you so much for the marinating recipe: left the meat for 12 hours in the fridge to marinate and the barbeque was AMAZING! Honestly! It took me an entire month to find all the ingredients on Amazon (I live in a small city in Italy, no Korean shops for miles, hundreds of miles!) but I'm so glad, because the sauce ended up being so amazing that I'm planning to try it on anything even vaguely edible! A really huge thank you from a fellow supercurious cook!

    I made gochujang stew with all the ingredients Aaron had and added butternut squash and spinach. It was delicious. I think the butternut goes really well with gochujang.

    Since we visited Korea before the pandemic hit my family has been craving the food we had during our trip. We’ve learned to love those sweet spicy food 🥘 🍲 Koreans enjoy so much. Gochujang is now a staple whenever we crave for some Korean food.

    i'm argentinian, started using thin everytime I cook meat (not in asados, don't kill me ) and I'm in love, I'll try this but with the spices I can find here , somethings are really expensive, buuut keep this recipes coming because I'm now the designated cooker in all my friends groups and the want more Korean food in our gatherings and everything is thanks to you !! ♥

    the way you edit your voice when u say “MSG” is cracking me up 🤣 not sure where Americans got the idea that MSG is bad, but they seem to only be selective about it when its asian food even tho MSG is in mayonnaise, processed potato chips, instant noodles packs, etc.!

      there was a concerted effort by racist politicians in the 70s-80s to vilify ingredients associated with Asian cooking like MSG , as Chinese immigrants started opening restaurants around the country.

      yeah, there's actually quite a bit of history behind that. you can read about it in-depth on other places, but basically Asian food has been long stigmatized in the West. there was a whole preoccupation with Asian food being really unhealthy "because MSG" despite the fact that many other foods in the US contain MSG.
      they called it "Chinese Restaurant Syndrome" as a catch-all for people who apparently experienced some kind of reaction to eating MSG. you can look up how it's basically been debunked as a myth, and even though there might be people out there with adverse reactions to eating MSG -- it's been entirely labeled as something exclusively happening with Asian food, which is entirely false.
      when my dad first moved to the US many years ago, he noticed how eating Asian food was looked down upon, so the whole MSG thing is honestly just one part of that.

      Well I don't know about other people but I grew up having to be really careful about MSG because it causes migraines. The biggest culprit that I'm aware of is salad dressing from restaurants. I grew up in a really small town so we only had one Asian restaurant, it was Chinese and they didn't use MSG so we never, at least in my family, associated MSG with Asian cooking.

    My husband makes his own BBQ. He made some recently and said the chili sauce he normally uses taste more like ketchup and not spicy. So he added gochujang to spicy it up. He said he is tossing the chili sauce lol

    I used your gochujang stew recipe for lunch but made a number of substitutions since I didn't have many of the ingredients. Anyway, the result was heavenly, really out of this world, super yummy!! 😋👍Instead of gochujang, I used a mixture of sweet miso paste, sriracha sauce and cayenne pepper. Instead of zucchini, I used napa cabbage, some white radish, and a bit of bok choy. Instead of pork shoulder, I used 4 slices of bacon and a bit of chicken breast. Left out the green onions and mushrooms as I didn't have any. Anyway I'm glad I tried your recipe and adapted it using what I had on hand. Thank you so much for a most delicious lunch!!

    I have an entire shelf of nothing but Korean ingredients. One of our first questions when we moved was, “where is the closest Asian market?” So we could restock. Tomorrow is Korean pancakes and I can make the sauce now 😁 Korean food is one of my favorite!

      Hope you can go to Korea after the pandemic is over. There are so many wonderful dishes that never make it out of Korea. My favorite is goat stew, yumso junggul.
      I live in Sweden now, unfortunately the country's only Korean supermarket is tiny, and only open 20 hours a week. I guess you have found Maangchi's channel? Her recipes are dependablely good.

    I love watching these 2. Funny and so informative. I grew up in Korea town in Chicago and loved going to my Korean friends house to eat. Now I can make it myself and as I eat delicious foods it brings back youthful memories. So glad I found this.

      @@rookieisabelle8384 oh my! I think an outside mold got in somehow. Usually I’ve just seen kimchi get realllllly sour when it’s old. (I tried freezing it before… it wasn’t too bad actually! I just used it to cook with in that case like pancake or stew or something)

    What a perfect couple! Aaron's narration is so cool! and Claire is so kawaii! I subscribed immediately. It used to take me nearly a year to finish a small tub of gochujang...I had no idea how important this is for making tasty Korean food. Since I learned a lot of Korean recipes I finished 1 tub in less than a month. Thanks for the recipes! I will give it a try!

      I think people assume this is just for Korean food, and maybe it being fermented puts them off too. But I find it to be the most versatile chilli paste you can get, I use it in western, indian, tex-mex, all kinds of recipes. It's quite mild, has a smoky flavour, also cheap. I used to get Italian calabrian chilli paste as my all-round go-to, but this is better imo.

    I made bok choy with onion and garlic and then I added gochujang paste with a little bit of water…since it was my first time using it…I poured it over rice and chicken and it was soo good! But now that you’ve showed me other ingredients to add to the paste I will definitely be preparing it this way from now on! Great video for us beginners :)

      Gochujang and doenjang don't expire. Some mothers will make a big jar of gochujang when a girl hits puberty for her to use when she gets married. My boss in Korea moved me into an "loaned" apartment that wasn't cleaned. I threw out all the gochujang in one of those big earthenware jars. The owner was mad, mad, mad. His mother had made it for him before she died.

      Dude yes, you should try to see if you can find Korean bbq sauce at your local asian supermarket. Just slather that onto some meat, fry on a nonstick pan, and you have Korean bbq! So so so good!!! And about as easy as it gets for a delicious dinner

      if youve tasted gokujang, you have a reason to buy gokujang. it may seem like blasphemy but i alway add some lightly toasted and bashed up sichuan peppercorn. add the mixture to literally anything. I just had it with cheddar cheese toasted sadwich, and yesterday with a bacon salad. amazing stuff. tommorow with kimchee broth / stew!

    I bought a tube an i thought i was goingto forget about it but i have used it a lot. In pasta, chicken (fried and stir fried) and in dipping sauces. I really like the flavor. Thanks for the ideas

      Maybe substitute the meat with tofu/ tempeh/ seitan or chickpeas. That was what I was thinking.
