    Gochujang has been the ingredient that changed all for me. I add it to so much things, even western dishes now. Same with miso or doenjang but gochujang was my gateway to spicy food. Not just intensify like miso does, but it was something so new and amazing. It just adds a whole layer of love to food. I can truly say it changed my life.

    Thank you so much from this American/Polish/Irish gal! My first taste of Korean cuisine was kimchi that was made by a friend who was from Korea. And goodness she could grill some meat on a little $10.00 grill! That was 30 years ago and now I'm ready to make some wonderful Korean food!

    Love the detail you go into for each ingredient. Especially the first pastes. I'm always in awe the artform of fermentation, and aside from the need to get it right, the pride in making the final products! And also really glad to know that a lot can be used in fusion, I mean, I know it can, but knowing what sorts of flavors they have and what that brings is super important! Literally have half my cart from an online store filled with korean ingredients at the moment hahaha. Can't wait to try gochujang for the first time!

      Yes Kimiye, and you have picked a great Teacher! I really love how she explains and compare diverse products. Also, she keeps the reader in mind when talking about buying features, such as size and appearance while buying the items; not many Chefs here can claim that; yet she does this without comparing too many brand names; thus, if you are a supermarket CEO, you really have to respect that. So far as Chefs go, is my favorite Chef, hands down! (^_^) You 'll see!

    I agree 100% Helen, that all too often Asian cuisines are over-sweetened in western countries. For instance in my city (located in New Zealand) popular Thai and Indian dishes are often ruined by restaurant chefs' heavy-handed addition of sweeteners. Completely ruins the intended flavour profile and makes it taste like a dessert in the worst way. I love TH-cam for being able to learn how to make Asian dishes from credible sources such as yourself, so that I can appreciate the true flavours (or the closest approximation, given limited access to some special ingredients) of these classic dishes. Thank you for this fantastic overview!

    Just a simple I LOVE YOU lol, while most of these I have (through trial and error over the last 6 plus years) I don't know the back story to them ( how it's made and it's history) so this video was so wonderful to watch. Thank you for the education on the food and culture I loved way before it was trending. This is my first time here and I will be staying and active.
    Also, you mentioned something that really sits close to home for me, one of the things I love so much about Korean food is that it is not as sweet as other Asian and American dishes, which I just LOVE. My pallet has always been for savory, more robust, and earthy flavors than sweet, so Korean cooking and other savory cooking styles have always been a win/ go-to for me.

    When I traveled to Florida for vacation. I was not able to find the Korean red pepper paste. They all ran out & there will not be shipment for a few weeks or months. I had to make my own version of it. Appreciate Korea for making these special sauces for us.

    I recently discovered sesame oil, salt and pepper dipping for bbq meat. The meat I dont even need to season. This is similar to Vietnamese black pepper, salt and lime without the zing.

    Wow...very clear and detailed information. I have bought a bottle of Oligodang, would like to know more about how to use it. Moreover, everytime when i cook the seafood tofu soup / pork tofu soup, it was not in Red, it always come out brown red. But if i put too many chilli paste and red pepper, it will too spicy, what should I do with this. I did put the soy bean paste (brown) into the soup as well. Thank you

    Yay. I just bought one of the ones you showed and I added it to my barbecued pork which I’ve been making for years and I used to put a little bit of hot chili paste in there but I put a tiny bit of one of the ones you shown I can’t remember the name of it. Sorry oh my gosh I just took it to a new level was perfect. I love Asian food and spicy food. Lots of garlic lots of vegetables and meat. So I’m excited to keep going down the list of good little secret weapons to add to my concoctions. Ha ha.

    Thank you for your opinion on the sweetness of korean food. Nowadays some newer recipes and also prepared foods are sickeningly sweet, but my mother’s korean home cooking never tasted like that!

    Hi Helen, just found your channel and love all your videos so far. How many videos do you have so far? I hope you don’t mind if I ask for recipes and if you would consider making videos of some of my favorite Korean dishes. Here are some dishes I would like to see how you make them bulgogi,Kimbap, Bibimbap, chapchae , spicy squid stir fry, cuttlefish side dish, beef bbq short ribs (Kalbi), bbq chicken, seafood pancakes. Recently, I lost my appetite for food but, your recipes look so good it makes me hungry looking at them. I want to try making them. By the way, can you offer some suggestions of dishes to make with the ingredients like the Korean chili paste, pepper flakes, Kalbi sauce. I find I buy the ingredients make the Korean dish few times and then the ingredients sit on the shelf & refrigerator goes bad then I throw it out because I don’t know what else dishes to make with it. I waste a lot of money because I buy the bigger size container and then throw it out later because it’s gone bad. Also, I tried making my favorite chapchae dish but, after I follow the recipes I find online it doesn’t taste as good as my Korean friend’s chapchae I end up adding oyster sauce to make it edible. I know it’s not Korean but, it’s only way I know how to make it taste better. Can you please tell me how to fix my chapchae recipe if it’s not flavorful enough. What is it missing? Every time I ask my Korean friend for her chapchae recipe she says her soya sauce & sesame
    oil is homemade I can’t make my own sauces like she can get from her Korean mother, Thanks again, I will share your videos with my friends.

    I used to live in Uijongbu, and there was the restaurant a couple of blocks down the street from Camp Red Cloud on the way to Camp LaGuardia. They had this soup with tiny little clams in it and what looked like jalapeños, and it was SO spicy. I’ve never been able to find it anywhere else besides that restaurant. We used to go there every Friday night for “beef and leaf” and that soup. We were silly but loved that food!

As for less spicy tasting red pepper flakes, there are "mild" versions, but still spicy enough. If you can't tolerate spicy foods, I don't think you'll enjoy the "mild" version of the red pepper flakes.
