Once you done you can save the notes and upload.
What is the best way to accomplish this wirelessly so that I may move around the classroom as I present a lesson.
If you have software that lets you connect to your class projector or through Airplay.
Is there a way to “cast” from the iPad instead of connecting through the HDMI cable?
There is but using apps.

You can connect Apple TV to the projector and mirror the iPad screen. I've used this method to teach secondary science for the last 7 years.
