    That looks great. I grew up poor and we didn't have money for milk and eggs so my granny would make cornbread this way. I still think it's the best way to be honest. Thanks for sharing.

    Girl, they don’t know about this. My family from the south Alabama and my Grammy and Auntie made these with them green field peas and collard greens. Lord rest their soul. This makes my mouth water❤😂❤😂❤😂

    I was born during the depression in 1934, you do the math, and this was a wonderful item I loved all my life. Mom taught school, for which she didn’t get paid for two years, and this was an everyday bread my early childhood. Free meal, eggs, milk, a chicken a week and mill ground flour. Thank you soo much for the memories!

    I am not raised southern, I have heard of hot water cornbread but I really had no idea about it and how it's made. I stumbled upon your video and it looked so good I just had to make some.     I grew up with plain white stone ground meal, pinch of salt, boiling hot water, and cooked in bacon gold (grease). We ate with seafood and vegetables. I liked them with just butter on them. What memories! Makes me miss my Mama and Grandma😢 Appreciated all the good food I learned to prepare!!😊

      Juanita, I grew up eating...but didn't pay attention to the recipe or the method. Nannie would cut the round into two discs butter it and hand it back to me and it was DIVINE. My mother SWEARS her mother didn't add flour. She said it was Martha White brand White corn meal. "mom are you sure it wasn't White Corn Meal Mix? (flour etc added)" No, it was JUST cornmeal. So I have tried and tried with just corn meal and it bombs everytime. If I add flour I get binding and it works. But it NEVER tastes like my nannies did. Juanita, can you vouch for my mom, for sure, it was JUST corn meal? Should I keep tryiing with just cornmeal? 🤔 Thank you!

      @@b.walker5955 Your mother is correct. There was no flour, just stone ground corn meal, white, salt and really hot water. You added water until it was the consistency you need to make a small pancakes. Individual sizes. I’ll have to make some again and pay attention to the amounts. I use plain cornmeal all the time. I use yellow to make corn bread (yellow) that I am baking in the oven. Old School Cook

I just bought Bobs Red Mill organic corn flour for the cornbread in the oven, just as you cited. It is currently all I have. But WILL be on the look out for out for the white. I am sure most would say it doesn't matter, but the yellow is all I have tried and fail each time. Even if my cake is close to looking right, it doesn't taste the same. The inside should be creamy, dough like and the out side crunchy. The one element I can't duplicate is the fat. None meater here, can't use lard or bacon grease and choose to use Avocado oil. ~ this young whipper snapper likely can't get that OLD SCHOOL COOK nirvana you exist in, but I will do you proud by trying. THANKS AGAIN! Really grateful.

      My mama made it with coarse ground white meal, a little salt and water, fried in oil. Wish l could find coarse ground white meal today. The old time grist mill where my mama grew up closed down a bunch of years ago. Miss the mill and the meal!

      All mac n cheese was baked back in the day and there wasn't a cheese sauce packet either. You had to make that from scratch in your gravy pan.

    We had that with syrup for dinner many times back home in NC. We didn't have much but we made due with what wr had and NEVER complained about eating the same thing because we were EATING. I miss my mother and the south. We used the butter flavored Crisco or lard

    Nothing better than good ole dog bread. My mom was born in 1918 my older sister 1938 I think anyone born in that era in my part of the country had this down pat. Could get sick eating so many of these thanks for a trip down memory lane. Will be heating the grease tomorrow

    I make mine about the same but a few years back I started adding a wee bit of baking powder, it gives the interior a fluffier center like traditional cornbread and the outside is still crispy. I generally make mine with less water but think you have the right consistency, my family did not make hot water cornbread, so I had to learn on my own, thank you so much

    Looks delicious. Grew up with this in Virginia. My family never called it hot water cornbread, just fried cornbread. I always preferred it to baked cornbred. Mom always preferred white cornmeal and would fix half this way, then add more water to the mix, so it would be thinner and spread out in the pan when fried. That was for me, because I preferred it thinner and crunchy. Now a plate of fried cabbage or collards and we be in business, yum!

    my granny from Panama City FL made these & I tried to get the recepe but didn’t, we used to look forward to them at get togethers, hers were shaped like pancakes. She could also take a lima bean & make me wanna eat beans bc she new how to make them so good. Im not a cook but one day when Im feeling energy & motivation I want to make these. 😋

    My great gramma made these. We made them with less water though. We put some bacon grease in the iron skillet dampened our fingers and pressed them out with our hands. You could see prints of your fingers. We fried them till golden and drained them on a paper sack.
    Delicious Also good made with minced onion in the batter. Texas

    When I was a kid every Friday my mother cooked hot water cornbread, fried fish, and french fries. She cooked all three in the same lard and cast iron skillet. We drank kool-aid or lemon aid with our meal. When you dropped the batter in the hot oil I was a child in my mother's kitchen again. Thank you.

    I like your no nonsense approach to cooking, many measure everything which is fine but getting the right thickness to a batter is the most important thing. I didn't grow up with this in the North so much but some of my favorite food is just simple cooking! Thanks for sharing!

    Finally, i found real Hot Water Cornbread. I'm from St. Louis. Went to school in Nashville, TN in the early 90's. I never had that type of cornbread before. The place was called 'Wade's Kitchen' in Nashville that made it. All these St Louis soul food places swear that the flip jack style cornbread is Hot Water. I've been telling them that's not it. I'm saving your post. Thanks for sharing.....

    Grew up poor in southern Ohio. Had a grist mill next town over, and cornmeal was affordable. My Great Granny made these daily for us, to keep us full, and fried them in lard or, if lucky, bacon grease. Bless your heart for the recipe and the memory.

    This was perfect. I never knew how to prepare this delicious cornbread before. My mom and other elderly ladies served it quite often when I was younger. We ate them with whatever greens we served and even with other "savory" dishes. Thank you for the recipe. I took a chance to look up one from TH-cam and again...this was perfect!

    This is exactly how my Gramma taught me to make Johnnycakes, with one additional step: adding milk to make a pourable batter, which if you hit the sweet spot of consistency AND the perfect temperature of pan and melted butter (more like frying a pancake than a fritter), you would get a thin corn patty with brown, crunchy, lace edges. Our family's roots are on Block Island, RI - a tiny island, 3 miles by 7 miles - 13 miles off the southern Rhode Island coast. Even on this tiny island, there were vastly different Johnnycake recipes, I wonder if one of the others is more like this than my family's thin and lacy style. Anyway, this is fascinating, and I will DEFINITELY try this recipe!

    My mother used to make Hot Water Cornbread. Never added anything But Boiling Water and either a Tad of Salt or Sugar.Her Mother Taught her, and she taught me and I have taught my Daughters. I have made them that since I was 13. 😊 57 years
    Never tried it with flour. Depression Hot Water Cornbread with no Flour or with, depends I guess on what was available at your disposal. Lol. Yours looks Awefully Good.
    I sure know they will go Good With Beans n Greens. That's what we had with ours. Sometimes just that Cornbread.

    I made some! And I loved it!I added a little sugar, fresh grind cornmeal from the fields of Alabama! and Goya fine cornmeal, plus a little flour, they turned out delicious!

    I believe we inherited a version of this recipe from our African ancestors in Puerto Rico. They’re called surullos and the recipe is almost identical except we cook it on the stove and then we shape them into small cigar like shapes and then we fry them. Some people like a piece of cheese in the middle but I prefer them sweet. They’re so good.

    My grandmother lived her whole life in a small town in southern Alabama. When I was a kid (late 60s), she used to make these. We'd have them with fried chicken and lima beans or black eyed peas. Years later I was able to make them from memory but never had a recipe.
    Hers were always from a coarse meal and usually white, maybe ground hominy. Crunchy on the outside and soft inside. Thanks for bringing back some great memories.

    Certainly one of the best meals from my grandmother. Ham, collards, beans, stewed tomatoes and of course cornbread. The only difference is she smashed them in the frying pan with a fork so you could see the fork marks in the top.

    My neighbors were from Kentucky and there was always cornbread in a cast-iron skillet sitting on there stove. We'd grab a slice to snack on.
    I'm going to try this method. It looks so crispy and delicious. Kinda like mush which we had at my home.

    I've always used just cornmeal & boiling water, shape by hand, drop in hot oil & fry. That's the single parents way, my kids have always loved it, there grown now & still love it.

    I’ve never had hot water cornbread but my mother and aunts and uncles love it. I’ve never seen them eat it with “food” but they do crumble it up in a glass with buttermilk and eat it that way.

    Looks delicious❤❤. Im Puertorican and we shape them like little long logs and we call them sorullos we make them sweet or salty and sometime we put cheese in them or if we ar making cod stew well boil them and honey hmmmm. This recepie reminds me of it.❤❤❤❤

    Saved this and I'm gonna make it this weekend. However I'm gonna make it Mexican style and add some chipotle seasoning, oregano and diced jalepenos then top with Monterey Jack just as it finishes frying. Imagine how good these patties will taste after giving them a dip in some chili con carne.

    My mom from NC made cornbread similar to this but instead of flour she put in 1 crumbled slice of stale bread and did add some milk after water. Would add water until just wet and then milk until like very thick cake batter. She used that same cornbread to make her cornbread dressing at Thanksgiving. All so good.

    My Granny used to make this fried in steak grease or bacon grease she would form the patties by hand. She always split them in half and we buttered them or spooned red beans on them. Had a little bottle of chilipetine peppers in vinegar on the table that was our hot sauce. We had beehives on the ranch so we always had honey dessert was honey and churned butter mixed up slathered on a piece of hot water corn bread. We called them pushers sometime because you used them to push your food onto your fork for a big bite. Okra gumbo twice a week too.

    These look good. I'll try to make it tomorrow. I've made something similar without the cornmeal. My only suggestion is that once the oil gets hot dip the spoon in it and it'll release the mixture quickly/or not make it stick to the spoon.

    I was going to make me a few Pattie’s today but I will do mines tomorrow. It took me forever to learn how to make my own but I finally did it. Hot water cornbread is the best. But I also put two tablespoons of butter in it too.

    Looks good. Love corn bread, and yours looks great.
    I am a virgin to collared/mustard greens. I love spinach/kale in all forms/recipes. I want to try collared greens, but the most common method of cooking seems to be to drench it in heavy amounts of bacon/bacon grease to "make it good." I'm not against meat fats (prefer them over seed fats), but I was curious of you knew of a good way to make them that would be a little more diet friendly than the usual classic "bacon collared greens" that I see repeated over and over?

    Many years ago a coworker brought me this bread, I truly enjoyed it, but all I was told to use was meal, and water, and oil,so it was many years later I came across it on TH-cam called hot water cornbread, to this day I use meal, tap water, not hot,and a ladle mash it down slightly,fry in olive oil,eat them like a snack.Cook this bread often.Meal,tap water, olive oil.When I see the edges have turned brown l use a spatula to turn.

    We call these corn fritters where I'm from, but its basically the same recipe. I don't add sugar but I do throw a dash of cayenne pepper in and then drizzle a little maple syrup or honey over top. So good.

    I'm from Puerto Rico and my mother makes too but she puts butter in the mix and they are very good we call arepas de maiz in English cornbread fries

      Most places that offer cornbread is not really cornbread but a corn flavored cake.
      This is one way here I also like to make up my batter and.bake it in my cast iron skillet sometimes add some fresh jalapeños peppers

    my mother closely as she made hot water cornbread magic and waiting to pile it with real butter and eat it with cabbage & greens....was so Harddd😁, it was almost as good as my second favorite, scratch butter cake with caramel frosting.

    never heard of this til now! we used to make cornmeal mush and then chill, slice, and fry it.
