That's a great explanation of an old southern recipe. We live in Texas and it is most often too hot to use the oven to make cornbread, we want it too often. These corncakes go with everything, beans, stew, greens, etc. You are the first person I found that even tried to tell how much water to use. We never measure anything, just depends on how much you want. My Mama had a teakettle on the stove and we just scoop up some meal and pour the hot water on it until it was right. There is no better cornbread in the world than this. Thank you so much for helping keep this recipe going. Cheers

My granny born in Georgia, always used yellow corn meal but she made a very heavy cornbread lol. Delicious but no flower and baked in cast-iron we ate it with blackeyed peas and buttermilk. She ate it everyday. Sheived till 87. What a cook she was.
This recipe is the same as the recipe for AREPAS only you can use lukewarm water vs the hot water. Make up the dough as she says here, in this video then let the dough rest for about 10min. Break the dough into gulf-sized balls, flatten them (not too thin) so they're circular + a little thinner/flatter than hers, then put them onto a hot, greased griddle (I use an electric one) or into hot oil in a frying pan. Fry each side for a few minutes. Transfer the arepas onto a lightly greased cookie sheet + bake them in the oven for 15min at 350°F. Let them cool for about 5min before GENTLY + SLOWLY cutting them open at the top letting the knife slowly sink down into the aprepa forming a pocket. (You'll have to SLOWLY + GENTLY move the knife around to "dig" a pocket each arepa.) You can then get creative + fill the pocket with whatever you like- ground beef + cheese (like a ground up cheeseburger), ham + cheese, black beans + crumbling cheese, mozarrela + pizza sauce, you name it! (You'll want to use a cheese that is salty or you can just add salt.) There are plenty of recipes for arepas on the internet. Each country + each home has their own unique way of doing theirs; so, experiment + have fun! Cornmeal + corn flour (used to make tortillas) are wonderful to have around for when you're getting low on food + need to get creative (i.e. when your on SNAP/food stamps + it's the end of the month) so that you can feed your family!

He cooks a lot of her recipes and I have been begging him to make this for me now I can make it for myself. I do mines the same way except I used to tbsp of butter in my mixture. Never tried to butter it afterwards because it’s was already sitting in that oil. Your patties did come out golden
Yes you are right I do mines the same way with a little butter and I fry mines in crisco oil it makes it crispy but you got to really boil that water hot I'm from Louisiana that's how we do it

This looks delicious! We use white AUNT JEMIMA cornmeal, lol. Yes, I know the name changed even though we never asked for that. ANY WHO! 😄 I may occasionally add a little bit of sugar, but usually its just cornmeal and a little salt so it's not so "fresh". Then add enough boiling water to get the consistency I want. It's a MUST for greens in north Louisiana (oven bread is just WRONG!!), but we eat it with peas and beans, too so I never add butter. My aunt wants it with almost EVERY meal!😄 Also, adding cold water to your hands as you make the pones keeps the cornmeal from sticking to your hands as well. Great video!
I'm happy to see that someone other me did not add sugar to the recipe, my grandmother/mother/aunts never did, however, I was told to have cold water on the side 😒 couldn't figure out why until I made a patty. I'm going to send this recipe without sugar to a lady to save her marriage 🤣
This is similar to what my family made but made thicker and baked in an iron skillet. Then sliced open to add cheese and put it back in the oven until the cheese softened. Do not know if the cornbread patties had to be turned over half way thru baking or not. Was a special treat when I was growing up. Wish I had learned how to make this from Mom before she passed.
