Rik, just a little tip I learned when cooking cakes. Cover the top with pre-prepared greaseproof paper halfway through baking to prevent the top from browning too much. This is especially useful when cakes batters are more liquid and take a long time to bake on a low temp.

My mom used to make this when I was a kid. Mom used to say it was something her aunt used to make all the time when she was young. My mom's side of the family was from Scotland and Ireland. She was 2nd generation American. Watching some of these videos reminds me of watching my mom cooking. She always said New England traditions. I think it is actually a British, Scottish, and Irish tradition. I love watching your videos❤

      Your mom
Is right. They’re definitely British in origin. You can trace lots of them back in old cook books.
For example apple pie is English not American, and the oldest written recipe is in an ancient cookbook dating back to the 1300’s called ‘The Forme of Curry’. That book still exists. The English were eating apple, fruit and meat pies long before the USA existed. Early English, Scottish, Welsh and Irish settlers brought with them these recipes. The English brought with them apple seeds to grow apples, as they aren’t native to America. Many, many other recipes crossed the big pond with the forefathers.

It took closer to 30 mins to be ready but came out great. And in the US castor sugar is just ‘ver fine’ granulated sugar.

This looks absolutely amazing, and another "to make" on my list. I love that you are doing some "old school dinner" recipes at the moment, but i would love to see some easy Thai recipes of desserts that we could try (if we would be able to get the ingredients in UK).
Keep up the great work. I enjoy watching what you make, regardless if i would make and eat them myself.

I wonder why it was a school dinner favourite - it's exactly what we got, once a week, at school dinners in the 60s. The slices we got however were smaller, much smaller than what you cut for yourself! And there was no custard to go with it; and I'm sure margarine was in it and not butter! But it didn't prevent us from queuing up for seconds, like Oliver Twist. Only the first 4 or 5 kids got more.
