  • Lardy cake, also known as lardy bread, lardy Johns, dough cake, or fourses cake, is a traditional rich spiced form of bread found in several southern counties of England, notably Hampshire, Berkshire, Wiltshire, and Oxfordshire. Particularly popular in Berkshire. It's known for its lard, sugar, and dried fruit layers.
    The history of lardy cake dates back to at least the 19th century, although its exact origins are unclear.
    Lardy cake is a fine example of how regional ingredients and practical needs can give rise to a distinctive local food tradition, reflecting the history and culture of its place of origin.

    Ingredients:
    - 500g strong white bread flour
    - 1 tsp salt
    - 1 tsp mixed spice (or a combination of cinnamon, nutmeg, and allspice)
    - 50g caster sugar
    - 15g fresh yeast (or 7g dried yeast) I used dry yeast
    - 300ml warm milk
    - 150g lard, softened
    - 150g mixed dried fruit (such as sultanas, currants, and candied peel)
    - Extra caster sugar for sprinkling
    Glaze: 50%/50% Golden syrup/water
    Mixed spice
    1 tbsp cinnamon
    1 tsp Nutmeg
    1 tsp allspice
    1 tsp ginger
    1/2 tsp cloves
    1/2 tsp coriander
    NOTE: TIP - If the lardy cake is cooking too quickly, you can cover it with aluminum foil. If you feel it's not quite cooked to your liking after turning it upside down, turn it upside down to brown the bottom. I have used the procedure in the past very successfully. Every oven cooks differently.
    I cooked at 165c - 330F for 27 mins - Because I was using an air fryer - regular oven 175c - 350f 25-30mins

    Even though I'm a man of Kent I lived in Southampton for a year in 1978 when I was 13 and every school day morning I would go to the bakery 4 or 5 doors away and buy a lardy cake for breakfast and it was heaven! I remember the Baker must have accidentally (or not) left some air pockets in the dough and the sugar and fruit would caramelise in them and it was complete bliss. They were sold on 5 inch rounds and I ate the lot but still remained skinny! In my humble opinion they must be oven heated halved and spread with butter

    Recently in a social media post, someone was claiming UK cuisine was the worst in Europe. I guess they had limited tasting of our more traditional foods like these. Sold in a French or Spanish bakery and tourists would come home raving about how fantastic they are.

    I came to UK as a bride in 1975 and remember buying the Lardy cake at the bakers, loved it especially wormed up with cup of tea. Over time they disappeared 😊

    My grandmother loved this.I was born in Winchester England and I remember my mom buying this as a treat for her mother, we children loved it as well.I shall make some to share with my family this New Year's eve.
    Yesterday I turned 77,on January 3rd we set sail to England on the Q M 2.Looking forward to being in Winchester again and England in general. Happy New Year!

    Oh I LOVE lardy cake! When I was a child the village has a proper bakery and made everything onsite. Friday's were lardy cake day ... Sadly the bakers is no more, but I make my own these days!

    That looks exactly right. I grew up in Wiltshire and lardy cake was a very occasional treat. The "best" for me came from a bakers on Castle Street in Salisbury. It's at its best warm from the oven but it also makes great toast the next day. Use a grill though rather than a toaster.

    I switched to lard a few years back and I do not regret it. Wonderful fat for all sorts of cooking. Makes the best biscuits-American southern biscuits, not cookies, lol. I’m going to have to try this. It looks delicious. And mixed spice sounds a bit like our pumpkin spice.

    That looks wonderful, my great granny came from the southwest of England, near East Moen.
    As an American, i looked with horror at the lard. We have been programed to think lard is the worst thing we can eat, mind you 90% of our food here is processed and loaded with chemicals... we're victims of lard propaganda

      Cooking with lard versus butter involves several nutritional differences that impact their health benefits:
      1. Fat Content: Lard generally contains less saturated fat (about 5 grams per tablespoon) compared to butter (about 7.5 grams per tablespoon). Lard is higher in monounsaturated fats (about 50%) and omega-3 fatty acids, which are beneficial for heart health. Butter, on the other hand, has a monounsaturated fat content of around 33%.
      2. Vitamins: Lard is a good source of vitamin D, essential for bone health and immune function. Butter is higher in vitamins A and E, which are important for vision and skin health.
      3. Cholesterol and Calories: Per tablespoon, lard has slightly more calories (115 kcal) than butter (102 kcal), but it has less cholesterol (12 mg vs. 30.5 mg in butter).
      4. Cooking Properties: Lard has a higher smoke point than butter, making it better for high-heat cooking methods like frying. It also has a more neutral flavor, allowing other ingredients in a dish to stand out. Butter, while lower in fat content, is preferred for its rich taste and versatility in various recipes.
      In conclusion, both lard and butter have their unique nutritional profiles and cooking uses. Butter, with its rich flavour, is often chosen for its culinary versatility.

    I use to buy sandwiches from a guy named Lennie. He would give the most fabulously generous serving; thick bacon, slabs of cheddar, piles of coleslaw... He would use the bacon fat for incredible homemade lardy cakes!
    I had to stop having lunch there so i could go on secret lunch dates with my colleague. Whenever we went back he would come out, in his Hawaiian shirt, shorts and crocs, and conspiratorially slip us a free lardy cake. 9 years later, I'm engaged and Lennie's retired. I miss those lardy cakes!

    Sat. Dec 30, 2023. Looks delicious. Sounds Christmasy! I'm going to mix up some "mixed spice" to have on hand, minus the coriander. I don't have any because it is not a spice used much in Canada. It may not have been as available as the other spices back in the day of bringing in recipes from homelands. My family was one of the first to settle here in 1756 from Germany to Pennsylvania, to work off boat fare from Europe to North america. Then, they were able to come to the new world of eastern Canada in Nova Scotia & New Brunswick. They came on the Hector to The Bend on the Peticodiac River at the end of the Bay of Fundy. A few families, Stief, Lutz, Tritz, Jones, Copple(sp) they didn't survive. One more family, I think. The world's highest tides come up here in the form of a tidal boar. A fast rolling band of water is being pushed up the river, which is narrower than the bay it is coming from. It is a great swell of power. It is less than it had been due to modern engineering feats of the mid 1900's. A causeway was stretched and almost blocked the river 60+ years. The river has been released to run its course again since approximately 2020. It generated many jobs at both ends of its coming and going. I have never heard of the lady cake before but it seems to me it would have been good fare fore hearty hard working men and families claiming workable land from the large land grants. Time was marked for achieving certain tasks to secure ownership.

    I raise pigs and always process the leaf lard at home. I used to make Lardy cake for my husband - it was delicious and fun to make. Very nice video

    I live in a very traditional seaside village. We have an old fashioned bakery that sells Lardy cake and other old time favourites. Lardy cake is very popular, especially in this bitter weather. It all sells out by about 10:00!!!! Our butcher sells home made pies. My husband can never resist buying one when we go round there 😁

    Ooooh I love lardy cake…….it’s delicious, sweet, and satisfying. Lard is a fabulous ingredient and I really don’t understand why some folk are scared of it, because it makes the best pastry and ofc lardy cake…….and yes I have mine with butter 😝 it’s a lot sure, but it’s a treat

    Lard is my favorite fat to cook with. I render my own from leaf lard. It makes the best pie dough imo. That said, I really want to try this recipe. So thank you very much for sharing your recipe 😊

    My Mom had a gas range with a standing pilot light as they called it, which stayed on. The top was always warm, so proofing bread was easy!

    Being a Berkshire born and bred Baker, I heartily approve! We used to put the dough in a round tin with the golden syrup on the bottom. When we turned it out, the cooked syrup would run down the sides and set when cold, making a lovely crunch as you bit into it.
    (Not sure about the extra butter though!😮)

    Never heard of that one before Rik, but looks great! I remember my mother using lard in her backing, but never used it myself. May need to give it a try after watching this one.
    Here's a suggestion for you: try making a "Pouding Chomeur". Poor or unemployed person's pudding in French. Great desert to go with that Tourtierre you made.

    Hi Rik, l made these and they were Lovely. I made them with candied peel and stem ginger, soft brown sugar and used the ginger syrup on top as these were the things l already had. Gorgeous 😋👌

    Love Lady cake. The best ones had sticky crunchy bases. A friend who used to be a cook said you needed a good layer of lard and sugar in the baking tin to achieve this wonderful base. Thanks for showing us and bringing up great memories.

    I can smell it now, that lovely, beery-yeasty sweet smell. The smell of my Nanas. Grew up on that in Swindon Wilts, a decent sized square for a tanner, and getting the most caramelised bit was essential!

    Lard has less saturated fat than butter. Also, warm your milk a little, as it prevents gluten strands from forming if it's cold 👍

    Hey Rick (no pun intended), recently found your channel, and as a child of the 40s, you have revived some wonderful memories. When you mentioned mixed spices I immediately thought of my mum's bread pudding. A chunk of bread pudding in a bowl of custard was a real treat, and what about a chunk of spotted dick (don't know if I'm allowed to say that) and custard, treacle pudding, rice pudding with a dollop of jam, jam polly polly and of course lardy cake, all cheap and cheerful but things I hadn't thought about for years.Thank you. Oh, and liver, bacon and onions. Still cook it.

    For me not enough lard, the lard needs to be slightly runny after taking it out of the oven, so that when it`s turned upside down, the lard permeates through the body of the cake.

    Well presented recipe, thank you. Would you consider a small 'improvement' ? Before combining the ingredients, heat the liquid to about 35c, then mix together the liquid, yeast and a little sugar. Rest for fifteen minutes and the yeast will burst into life giving a lighter and fluffier dough and final product. This works with all dough recipes needing yeast and makes a surprising difference.     It is similar to milanese pan tranvai (the tramway bread). Our version, thouguh, has slightly more sultanas and raisins, has no added sugar, has not spices (we were poorer), and uses butter instead of lard (which is more traditional here).
