Lovely to see this recipe Rik.When I was 15 I started to work in a large bakery in B’ham which had 14 shops so we made a lot of these sponges,at least the men did,us ladies were called cream finishers,and some did the wedding cakes.I think we used strawberry jam,it so long ago hard to remember,but I do remember we did a chocolate version with pineapple jam,and chocolate whipped cream,when I made occasion cakes for the restaurants I worked in,and the order was for chocolate cake I always put a layer of apricot jam on them,and people would rave about them as chocolate cakes here never have a jam layer,and it does elevate the cake so much,I also offered chocolate raspberry too.😊

Outside of Christmas cake this must have been the most popular cake of all time. I think it must have been the base of most birthday cakes and possibly wedding cakes. Light enough for anyone and a perfect munchie. Sad really when just about every household would have had a cake stand years ago now it is probably seen as eccentric, but I do hope simple quick easy recipes like this makes for something of a revival.

Hi love butter cakes and your Victoria Sponge Cake was just yum, I followed your recipe, but cut down flour and sugar as I only used 3 eggs! I make all my butter cakes very similar,but usually put frosting on top! The way we made Sponges that I learnt at high school were made without butter or shortening of any kind, and you beat the eggs till light and fluffy, and added flour with cream of tartar, and perhaps bi carbon mixed with a little milk! I know this particular recipe is the traditional one made for Queen Victoria!Which ever way you make them they are just Moorish! There is another sponge one I learnt with custard powder and that was always great as well! Thanks for your recipes, now to your sage stuffing my mum used sage , onion and breadcrumbs to stuff her chickens and the stuffing was delicious back in the day!

As a girl from Lancashire, my mum did only make this with jam then dredged it with caster sugar, but eventually she did add cream but still used caster sugar on the top.

I weigh my eggs first and add equal amounts of other ingredients. Also put sugar on the top but it ends up looking just like yours with cream and jam. It's always yummy😊
Love a Victoria sponge- I usually put butter cream in mine only because it lasts a bit longer out of the fridge. I also love a nice cup of Earl Grey tea in a proper bone China cup and saucer. I never put milk in my Vic. Sponge, always a spoonful of warm water! And you can make the cake, all in one, in a mixer. For those like me who struggle a bit with holding electric whisks etc, the all-in-one is a god send. You can add almond essence instead of vanilla and put apricot jam in the middle for a change. A lovely cake for tea time.❤❤
My grandmother who came from West Sussex region used to make her victoria spongecwiyh strawberry jam and no cream. She was a warbride who married my grandfather (Canadian mikitary nurse) during WWII and followed him to Canada to raise their family.

I never put milk in my Vic. Sponge, always a spoonful of warm water!
And you can make the cake, all in one, in a mixer. For those like me who struggle a bit with holding electric whisks etc, the all-in-one is a god send. You can add almond essence instead of vanilla and put apricot jam in the middle for a change. A lovely cake for tea time.❤❤

My grandmother who came from West Sussex region used to make her victoria spongecwiyh strawberry jam and no cream.
She was a warbride who married my grandfather (Canadian mikitary nurse) during WWII and followed him to Canada to raise their family.
