- Traditionally, pibipollo is a giant tamal filled with chicken in an achiote sauce that is wrapped in banana leaves and steamed in an underground pit for hours. Pati transforms this celebratory dish from the Yucatán into a version that captures all the flavor but is easy to make in any kitchen. Get the recipe here: patijinich.com...

I will be making this for Christmas this year. My mother was born in Guatemala and she always made tamales in the banana leaf.

I can't wait to try this recipe for my family
Good job!
Pati, I love this recipe sooo much. I have made it for my family a couple of time already. The only thing I added was the cebollas curtidas con abaneros (YUMMY! 🤤)
Thank you for your inspirations 🥰
Great idea!!
Ayyy, Fabiola, la curtida lo hace muy yucateca 😋👍 Me gusta. Liz ❤
Our friends make the best banana leaf tamales in their city (Cd. Mante) They sell them at the local rodante/mercado. I'm craving one, I haven't had a good banana leaf tamal in over a year. With this video, maybe I can try.
Mmmmm
Pati, i just wanted to say thank you for such an awesome recipe. I didn’t have chicken broth so i used Amish Chicken Base from a jar and the maza was so delicious. I can just make tamales with just maza.😊! My husband doesn’t care for tamales done with banana leaves but i do. I made his with corn husks and they came out just as good👍! Thank you so much for such an awesome recipe. I just wish there was an easier way to knead the dough and to mix it in the hot pan, because i have arthritis and it was a bit hard to stir. Can you also tell me what kind of maza you used?
This dish reminds me of the Cochinita Pibil Dish from the Yucatan Peninsula.
Yes, the filling is very similar!
Hi Pati ! I always wondered how to use the achiote and this is such a wonderful example. Is it also possible to use this when making the masa for traditional tamales, with the appropriate quantities of achiote sauce to masa? (The meat stuffing would have another seasoned flavor.) I love this tamale version, too. It's so easy and impressive. I must try this.
Gracias! 💕
Of course, go ahead. Enjoy!
@@patijinich Thank you, I will! 😋👍
Yummy 😋 tamales wasn’t my moms thing but my Tia made them every year during Christmas. Do you have a recipe for tamales in corn husks with/ pork or chicken? Love your channel and you have a beautiful familia.
Of course Melody, here you go! patijinich.com/chicken-in-green-salsa-tamal/
Gosh, Pati, all of your recipes look amazing!
I don't have a gas stove; can I warm the banana leaves over regular coil burners, or is there a better way?
Yes you can!
Where do I buy Achiote paste here in NJ?
