Here Pati is making an enchilada she loves for a Sunday family meal, Pork Tenderloin Enchiladas in a Mole Verde sauce. She also prepares a quick radish pico to top them. Yesterday I made the almendrada with chicken from her website. It was absolutely delicious!! The chicken was so moist and tender, the sauce was thick, hearty, and savory, and the aroma was so amazing! Gracias, Pati!

Yum! The more sauce the better! I can't wait to make the mole verde sauce. But why is a "mole" sauce? I think of the super rich mole sauce with the Mexican unsweetened chocolate when I think of mole. Also, it's not a Pati video until you say "mooshey". Love the vids. Long time fan. Peace.
Finn McCool Mole is just a sauce. There are dozens of varieties across the country, with the best known abroad being the ones that incorporate chocolate. Most moles are not sweet.

Why is it important in Mexican cooking to cook mole or sauces in oil? Is it ok to cook the mole in a pan with out the oil? Patti you very talented!!!
