Mrs Jinich, I will give this a go. Looks fantastic. I am a go for any dish with beans in it. I don't have that Mexican sausage, but a local company's breakfast sausage will be a substitute. I must also say (if you actually read these) that you look particularly fetching in that outfit.

I grew up in San Diego right on the border. My favorite place to eat is Quatro Milpas, a tiny family owned place with the BEST chorizo and beans. I wonder if this is the same thing.

Delicious, only two of us so I cut it in half, also I added chopped onions to the sausage/bacon and cooked it in the fat and and cooked it a bit drier and made sloppy tacos.
Can you do lime rice, steak from Chipotle. My daughter loves it so much, she makes me pick up at least 2 times a week. And it costs me $25. And she double up the guacamole. Thanks
Those beans look delicious, but no eggs to go with,or tortillas? I was thinking since it's for breakfast /brunch eggs would be good in it,but idk about fried eggs,since runny yolk would get all in with the beans,maybe hard boiled eggs?

This came out great, considering that I think my pinto beans were stale. I had this problem also with spit peas. I pre-soaked the beans overnight AND. cooked them for a few hours and the skins were tough. My pea soup was the same way so I bought a fresh back of peas and did the same recipe the very next day and they came out great after just 1.5 hours. Never knew that dried beans a pea would go bad after a few years.
