Posole can be made from almost any kind of meat, or with the meat left out altogether. It"s great for the day after Thanksgiving or Christmas for disposing of leftover turkey.

Que bueno amigo! Here in Northern New Mexico We eat a lot of posole too! We use pork as well as chicken. We also use our home grown Chile off of the ristra and make Chile caribe and mix it in. I like how you use the onion and garlic. I also like using chicos sometimes. When I make chicken posole I like using bone in chicken thighs 😋.
I will make this it looks delicious I'm a fan of soup and your presentation is absolutely beautiful you do a wonderful job with your videos I thoroughly enjoy watching them and learning how to cook traditional Mexican food you're doing a wonderful job keep up the good work :-)
Patti! Can you make a video about Picodillo? I remember it had potato, sweet peas, carrots, ground/shredded beef, and little tiny peppers, they were the same size as the peas, but they were spicy. Pepita's I think they were called. I used to eat them whole and add them to my Albondigas soup during college, I never knew what they really were, a good friend of mine would give me a jar of these ingredients and I treasured them. Your videos are so helpful. Thank you for your teaching. Salud!

You need to make sure it is the dried hominy, not just dried corn.
