    Just found you when looking for a recipe for pintos and ham and I totally loved watching you! I Just started canning this year at 62! Have my first garden also! I was a busy RN for 37 yrs and now disabled but staying busy! I have glass top stove so purchased an electric canner, got a Nesco and love it! It's so easy but just doesn't hold as much as a Presto. I bought 23qt one but cracked stove top using it 1st time! So learned my lesson and put it up till I can afford a gas stove, lol. You really give great instructions and have a yummy recipe! New sub now! Thanks so much.

Nurses never get the recognition they so truly deserve. I started canning a long time ago but really enjoy it. It is always such a great achievement to fill the pantry and know great food is there when you need it! The pintos and ham are always my favorite to have on hand. I just love them. God Bless ❤

    I watched ypur video, and I know for sure that I did not pressure can for 90 minutes. Now the beans are looking weird. I may open and check them. Thanks for this info!!

      Yes, at least 90 minutes for quart size jars.

    Just a thought on the Presto the regulator that comes with it is basically for 15 lbs use the aftermarket one like the one she is using in this video!

    I’m just starting my pressure canning journey so thank you for sharing your video and recipe. I have a Denali pressure canner and an electric Nesco pressure canner that I’m going to be using. Do you season them before you can or when you are ready to eat?

      You can season the beans either before canning or after. As for these beans, this is all I personally add to them. When I open them, they are just perfect and do not need any other seasoning due to the ham flavor thought out the beans. But that is only my personal taste. You always ass what you like and "Make it your Own". God Bless

    So if I soaked my beans, and then cooked them in the crock pot for a meal, but wanted to can the leftovers, can I just follow the same instructions or should I pressure can them for a shorter period?

      You would still pressure can them for the same length of time. 75 minutes for pints~90 minutes for quarts. ❤

    Thanks so much for this video. I bought a big ham butt to bake until it falling off the bone and then canning all of the meat and juice in pint jars and then I will be able to use a pint to three or four pounds of beans to make hugs batches of ham and beans 😁

    I love cornbread my husband does not. What else could you serve the beans over that sounds good to you? They look delicious

      I would think anything you like actually. 🙂You could replace cornbread with any other breads (Garlic, sourdough, baguette...etc). I even know someone who serves these beans over rice and some who just eat them as is with maybe just a side salad. So I guess it is just a matter of personal taste.       Eat as is and maybe add raw onion chopped fine and or chow chow relish. I love them with cream potatoes as another side. Just yummy either way as long as he will eat them.

      My husband loves beans he could eat him at every meal for snacks it's just a cornbread. When I told my dad about it he said toasted bread with butter would be delicious lol He's 94 my dad

    You did not say how much water to add to pot of beans and ham when starting to cook.

      I do not really measure the water, but if I had to guess it would be about 4 quarts to 2 lbs of pintos. As for the ham, I use one large ham slice for every 2 lbs of pintos. You can always add more or less depending on individual taste. Hope this helps. God Bless ❤

      No I do not. The ham is usually always salty enough. If any more is needed, I just add it later when I heat and eat. ❤

    Could I use the meat of ham hocks or is that too fatty to can?

      Yes, you can use ham hocks. I had never thought of those but they would make the beans so flavorful! They should not be too fatty, as just about any meats can be pressure canned. After they are cool, you may see a difference in color or a "greasy rim" around the inside top of the jars, but it would be harmless and would just incorporate back into the beans after they are opened and reheated.       I canned ham hock meat with broth so I can use it for soups and it's so convenient to have on my shelf! I think if you separate just the lean meat from the hock without the fat and skin then you'd be fine using it with the beans! Yummy!

      Sure you can! You can add anything you like to give it your own personal signature taste. This is just how we like it and think it tastes delicious this way alone. But sure, add whatever spices you would like. It is always up to the chef! God Bless ❤

    Hams good but love salt pork or bacon. But it all works out .

    Soak overnight, cook on stovetop for 90 minutes, and then canning for 90 minutes? Don't the beans get mushy? I thought that if you soaked overnight, you only need to boil for 5 minutes then let set for 1 hour and then proceed with canning.

      This is how I have always done them for many years and they have always been a success and made the way that we personally like them. But everyone is different. Yes, you can soak them overnight and cook for 30 minutes, then process for 90 minutes....IF there is ham or meat in with them. Otherwise, it would be a shorter process time. Also, depends on the size jars you are using. And yes, there are many I know who also do the 5 minutes boil, sit for 1 hour, than process without cooking further. It is always up to the individual on how they like the outcome of the product to be. Either way you choose to do it is fine and will work out. It is always a matter of preference, as I always say in all my videos. God Bless ❤
