I could critique terminology, labeling, and assembly but what you illustrated and put together is something everyone could build from and for that, I say great job!
Instead of messing with the internal wiring of your pot just add a single AC receptacle to the box where your pid and and a solid-state relay is. You plug in your pid controller into the wall plug, the power cord coming from pot into the ac receptacle in your pid controller box, turn on the pid controller and turn the pot control full on.
