I love your videos, particularly when they focus on practicality towards home butchering rather than commercial presentation. Could you do a video on cleaning and meat processing hygiene. I notice you use a large nylon cutting table, it would be great to see the cleaning process, both before using it as well as after, and the importance of this with different meats. It looks like you are throwing the ‘Silver skin’ into your trimmings which will become sausages. That surprises me, but I’m sure having watched you work that it is normal practice.
