What I Ate Today | Spring Edition! (easy vegan recipes)

  • I am showing you what I ate today! And it is the Spring edition! Although it is technically spring here, it's still cold. So I still want warm comforting foods most of the time! I hope you guys enjoy this video and get some meal inspiration for the next time you're cooking. Enjoy!
    Breakfast:
    1 ripe banana
    1 scoop Vega vanilla protein powder
    1 tsp chia seeds
    1 cup chocolate almond milk
    1/2 cup frozen strawberries
    3 ice cubes
    Blend!!!
    Lunch:
    Seitan recipe here: • HOMEMADE VEGAN DIY TAK...
    Maple Sriracha Sauce recipe here: • 6 Easy Vegan Sauce Rec...
    Cooked 1 cup of rice. Steamed a bunch of veggies. Put it all together (you know how stir fry works by now).
    Dinner:
    1 medium white potato, chopped
    1 large carrot, chopped
    1 cup (or more) original plain almond milk
    1/2 cup cashews (or a scoop cashew cheese if you have it on hand haha! recipe for it below)
    2 tbsp nutritional yeast
    1/2 lemon, juiced
    salt & pepper to taste (about 1/4 tsp each)
    1/4 tsp garlic powder
    1 tbsp oil
    1/4 cup white onion, chopped
    1/2 cup mushrooms, chopped
    handful of spinach
    Boil some pasta. I made approx 4 servings. Boil the potato and carrot. Drain and add to a blender with cashews, nutritional yeast, almond milk, salt and pepper and lemon juice. Blend until smooth. In a frying pan, heat the oil and saute the mushrooms and onions for about 5 minutes. Add the sauce and cooked pasta and stir to combine. Add the spinach and more salt/pepper if you want. Finish with a sprinkle of vegan cheese!

    I really do appreciate how simple your recipes are. Sometimes on youtube I find these really great recipes I want to make but it requires all these ingredients that I would never go out of my way to buy or keep in the house so these are perfect! Creative yet easy!

    I am new to your channel. I must try that veggie dish! Mind over Munch did a 2 ingredient brownie using box like you did. Just add I cup if seltzer water, ant flavor! Bake according to the box. Moist and tastey! I took them to work.... snapped up like hot cakes!

    Another great egg substitute for baking is applesauce. Somehow it works, and it keeps muffins, brownies, cornbread etc very moist!

    Thanks for the video. Just a quick note. But I guess Vega organic protein powder isn’t the safest protein powder to add to smoothies. High levels of lead because of where they grow the vegetables. Not life threatening, but still good to be aware of.

      Sadwich Nyan ;3 But now that you know this is an option, look at the ingredients list of packaged mixes you can get locally. Look for ones that you need to add milk and eggs to, not the just add water ones. Then when you find one, make it up and post it on Instagram and tag Liv. She’s got lots of viewers in Germany, I’m sure they would be happy to know what you find.

    Idk if you know this and I don’t wanna sound rude but I’ve been reading up about protein powders and vega protein powders have been found to contain a high amount of lead. Maybe it isn’t the particular one you use but I thought better safe than sorry to just mention it anyway and you could look into it yourself 💛

    I’ve never heard of cooking rice that way!! Does it come out any different than when you let all of the water evaporate? Great video!

      +Blaire Hungry I like doing it this way because I find my rice is so much less sticky! It doesn’t all stick in the bottom of the pot which I find happens when I’m not watching super closely with the other way!

      Jessica Colon now I remember my mom cook rice in a rice cooler but only for a big amount of serving
      Like for a family party or something
      I think it's maybe just a cultural thing

      I think it is a cultural thing. Using a rice cooker growing up was unheard of, although I do use one now and an Instant Pot. Rice was ONLY made using a caldero, which is a really bottom heavy pot. Cooking it like she did in the video and straining it had me clutching my pearls lmao.

    I’ve always wondered this but I’ve never found an answer.. is there a difference between almond milk that is sold in the refrigerated section & the almond milk that is sold on the shelf?

      +Val Hughes the shelf-stable ones go through a different process to make them last longer. I’m thinking it’s similar to pasteurization? I don’t find there is a difference in flavour but some people might notice a slight difference!

    I always cook my rice like that, it never sticks to the pan and it's perfect every time 😄 I don't have access to the fake egg, can I replace it with a flax egg, or should I use chickpea water instead?🤔

      +Hanna Ivarsson you could try flax egg! I haven’t tried it myself but my friend has and she said it worked well! I’m not sure about chickpea water, I have seen cookie recipes with it though so it might work!!
