PERUVIAN CHICKEN RECIPE:
2.5lb of Bone in, Skin on, Chicken Thighs
1/3 cup of Soy Sauce
4 Cloves of Garlic, smashed and peeled
Juice of 1 Lime, about 3 tbsp
2 tbsp of Olive Oil
1 tsp of Dried Oregano
1/2 tsp of Cumin
Heavy Pinch of Freshly Ground Black Pepper
For the Sauce:
3/4 cup of Mayo
1 Small Bunch of Cilantro
1 Serrano or Jalapeño, seeded optional
2 Cloves of Garlic, smashed and peeled
1/4 of a Small Yellow Onion or 3 Scallions
2 Tbsp of Extra Virgin Olive Oil
Juice of 1 Lime
Salt to taste

I’ve been watching Laura’s videos for like 10 years. Guided me making my first turkey for thanksgiving. Now I make the turkey every year. Helped me with a lot of my basics. I follow so many other cooking channels now, but I always come back to Laura. Happy to still see new content coming out. Can’t wait to try this recipe out!

This recipe is really AMAZING!!! I did not grill my chicken. I stove top cooked them. Making sure both sides of the chickens are well seared. Delicious in every way imaginable. This green sauce I have made it numerous times on my own years ago because I discovered it while trying Peruvian food for the first time and LOVED it. I keep this sauce handy for everything. Viewers, make this chicken today. You won't regret it.

If you take out all the membrane and the seeds like Laura on this video than NO!
I am a very spicy eater, so I added serano chilis whole, no seeding. Hope this help!
@@clombard7745 I just made the sauce with a jalapeno and it had NO spice at all. Tasted like a green bell pepper. How odd! It's delicious even without the spice thankfully.
So my daughter asked me to try this recipe and I am so happy she did. It is absolutely delicious! The flavor from the marinade and the sauce are so very good. Of course, I made the recipe before seeing the video. I marinated the chicken for six hours. I cooked the chicken, on the stove, in a cast iron pan. I substituted labneh for the mayo and the sauce was excellent. Thank you, so much, Laura for sharing this recipe. It really is awesome!!!
I made this yesterday, i like it a little bit spicier so i added Thai chillies instead of Jalapeño and added more black pepper. Otherwise kept the same recipe. I garnished it with scallions, cilantro and side salad. It was restaurant quality!!! The sauce was really good too!!

I prepared the sauce and took it to a BBQ gathering and told people to try it with chicken and everyone lost their mind. It was delicious. All the wives asked me for the recipe and I gave them the link to your video.
Peruvian food is the best
I just made this and it came out very well. I marinated mine for 28 hours and it did the trick just nicely. The sauce is key here. I don't like mayo so I used Greek yogurt with a splash of Rice Vinegar instead and it it was great!

Hi Laura, have been following you since 2011! Love this recipe. What do you think about adding a quarter of an onion into the chicken marinade?
Can I do it in oven? Grilling is not an option. Or in air fryer?
You cook it anywhere you want. Grilled gives it more flavor, but as long as it's cooked, that's all that matters.

How can I substitute the mayo?
Use Greek yogurt (or regular plain yogurt) with a splash of water and a dash of white vinegar.
Can you substitute the jalapenos? My husband is not a fan of hot, spicy foods
It's listed as optional so I'd just skip it as there isn't much that's going to give the same amount of chili pepper flavour without any heat.

She said “Peruvian inspired” in the title and clearly stated that this was not an authentic Peruvian recipe. It is not disrespectful to learn and adapt from other countries’ cuisines if you make it clear that you are not “the authority” on them.
I don’t have access to something like that. As stated it’s inspired, if you have a different way of making it that’s wonderful too
Green sauce is a Peruvian American thing, they don’t use huacatay because it isn’t readily available in the US. It isn’t ají de huacatay or ocopa. The way she made the sauce is actually accurate (minus the onion,) that’s how restaurants in the US make it. Nevertheless, she did say inspired.
