Chipotle Chicken Bowls! Easy and Perfect For Meal Prep!

- These bowls are my newest obsession and they will be yours too! So full of flavor and just the chicken alone will become something you will make repeatedly because it's so full of flavor!

CHIPOTLE BOWLS RECIPE:
For the chicken and marinade:
2lb of Boneless, Skinless Chicken Thighs
2 Chipotles in Adobo plus 1 tbsp of the sauce from the can
Juice of 1 Lime, about 2 tbsp
2 Scallions, roughly chopped
2 Cloves of Garlic, smashed
1 tsp of Oregano
1/2 tsp of Cumin
1 tsp of Chili Powder
1 tsp of Granulated Garlic
1 tsp of Granulated Onion
1 Tbsp of Chicken Bouillon Powder
Pinch of Salt
2 Tbsp of Olive Oil
2 Tbsp of Water
For the Corn Salsa:
1-14.5 oz can of Corn Kernels, drained and rinsed
1/4 of a Red Onion, minced
1/2 of a Jalapeno, seeded and minced
Finely chopped Cilantro to taste
Salt to taste
Juice of about 1/2 Lime
For the Beans:
1-14.5 oz can of Pinto Beans, drained and rinsed
1 Tbsp of Neutral Oil
1/2 of a small Onion, minced
2 cloves of Garlic, minced
1/2 Jalapeno, minced
1 cup of Chicken Stock
Couple tsp of Chipotle in adobo sauce from the can
Salt to taste
For the rice:
1.5 cups of Long Grain Rice, well rinsed
Juice of 1 Lime
1 Tbsp of Chicken Bouillon
1 Dry Bay Leaf
Salt to taste
Fresh Cilantro to taste, finely chopped

Made this recipe last night, and it was just as good if not better than Chipotle!! My husband gave it 10/10.. I would definitely say its more of a weekend meal since there are multiple components to make but as Laura mentioned, once you do make them, you have amazing leftovers for the week too!

I’ve been making your recipes since 2012 when my Italian boyfriend at the time told me that I cannot cook hahah (he was right). So even after years and years of trying your recipes I do have to say… this marinade IS A GAME CHANGER. It’s really the best
I love the method you said for rice preparing, that is absolutely perfect. I am from Pakistan, and trust me we eat rice with everything like lentils (daal), curry on hot summer days as it is light food and my mom makes the rice in the same way. Good thing is we use the long grain Basmati rice, which has such a beautiful smell in the house, and they are so fluffy and are starch free.
I use the same additions to my rice that you showed - also, strongly recommend adding a tablespoon per cup rice of turmeric at the same time - it goes even more yellow, but if you like earthy flavor from cumin and turmeric, it is SO GOOD! TFS.

Im going to try your rice method. But i want to know how you would make spanish rice though? Usually you fry onion, garlic, pepper, and then toast the rice, add tomato then add the water. My rice is always either a little undercooked or too watery.

The only rice I can’t get right is wild rice, so I just started throwing it in a rice cooker. My families from Central America so we never really ate wild rice.
i will try it , just bouillon gives me allergies because they add it turmeric .
I can't use cilantro because it tastes like soap to me, and my daughter. Is it ok to leave it out of the recipe? Is there something else i can use in place of it? Someone please answer. I want to make this!!
You can leave it out but it won’t taste quite the same
