Made this recipe last night, and it was just as good if not better than Chipotle!! My husband gave it 10/10.. I would definitely say its more of a weekend meal since there are multiple components to make but as Laura mentioned, once you do make them, you have amazing leftovers for the week too!
I made this last night (very quickly) and my kids & I loved it! No complaints from my picky eater from the spice/heat from the chicken! Winner winner, chicken dinner 👏🏻

I use the same additions to my rice that you showed - also, strongly recommend adding a tablespoon per cup rice of turmeric at the same time - it goes even more yellow, but if you like earthy flavor from cumin and turmeric, it is SO GOOD! TFS.

I love the method you said for rice preparing, that is absolutely perfect. I am from Pakistan, and trust me we eat rice with everything like lentils (daal), curry on hot summer days as it is light food and my mom makes the rice in the same way. Good thing is we use the long grain Basmati rice, which has such a beautiful smell in the house, and they are so fluffy and are starch free.

Laura when you put back the rice into the pot for the last 5 minutes is the heat of your stove completely off or not? Or are you not even putting it back there?
Im going to try your rice method. But i want to know how you would make spanish rice though? Usually you fry onion, garlic, pepper, and then toast the rice, add tomato then add the water. My rice is always either a little undercooked or too watery.
I can't use cilantro because it tastes like soap to me, and my daughter. Is it ok to leave it out of the recipe? Is there something else i can use in place of it? Someone please answer. I want to make this!!
Im pretty sure you’re right lol cause if you haven’t already made this recipe then it means that it really was you’re first time and your husband is wrong lol cause when you try something good u always recreate it if not even better within a certain time frame
