I was thinking the same thing. I still love this channel. I hope she is doing well. Age may not have anything to do with her no longer posting. My grandmother cooked and baked until she was almost 90.
I realise this is an old you tube recipe,but I made it the other day and it's divine. The only thing I did differently was added a few drops of Sicillan lemon oil in the topping with some butter in the icing. It was so yummy. Thankyou for a great simple recipe,I will be making this a lot!😊
Yes, I agree. I would enjoy seeing an update of her. But these recipes are timely. Except some people now use gluten free flour. So I don't know if you can adapt her recipes to gluten free.

I just made these for my daughters's birthday they turned out delicious! I used an 8x8 glass dish but it was deeper that Jenny's. My baking time was about 8-10 minutes longer, used a toothpick to check. The glaze was perfect. I grown lemons and this was one of the most delicious lemon bars, brownie that I ever baked. Thank You

LOL, I usually think I'm so smart, and every now and again a "Tip" comes my way that makes me question it. Such an easy work, why have I never seen it? Great tip about the knuckles (yep, I may have poked a few holes through foil.) And now I see another one. Thanks Megan, forming it around the outside of the pan is a great tip, too.
Having followed the lemon brownies recipe precisely, I put them in the oven and forgot all about them. So instead of 20 minutes they baked for 1 hour 20 minutes. Remarkably perhaps, they are delicious as a sort of biscuit, a bit like a jaffa cake with a very acceptable crust. I've added a timer to my shopping list! Jeff Robinson (Elstree, UK)

I added extra lemon juice and put the zest in the cake mix. Zest is extra fine. I Cut sugar by half cup and used powdered sugar to dust instead of glaze.... thank you for such an easy and yummy recipe!!
I made these as a dessert to go with Friday night home cookin' that I do for my grandson and his roommates (so, I know they get at least one good meal every week) and the brownies were a BIG hit!

@@gailsalvatore7372 Hi Gail, totally agree with you. It is a LOT of sugar for just one cup of flour. Granted there is a lot of lemon too, but still too much. I used only 1/2 cup and added 6 packets of Splenda (can be Stevia too, which is better - but I was out of it in the house.) 6 packets = 1/4 cup. I double the amount of lemon zest and added more juice. I love the yogurt in it - I used 0% fat Fage (only one I had handy), but added a bit more light olive oil. I think it turned out more like a lemon cake than a brownie. I will try again with the 2% yogurt Jenny mentioned, and maybe only one egg. It was way too fluffy. And yes: I did use baking soda, not powder! I even think lemon extract would be better [stronger]. I did not make the lemon glaze, which is delicious - have done before, but again, adds too much sugar, unless we can use stevia too, or something. I will definitely try again with modifications!
Whenever I make one of Jenn's cakes it's a success and I love the one bowl cakes since I am a senior who likes easy cleanup and the cakes are small and easy to cut and store in the freezer. Thank you 😊 Jenn

EZ change of easy 🍋 brownie recipe! My dear 94 yr old Aunty loves the tartness of lemon. What a hit! I only had fresh frozen lemon juice & NO lemon to zest. Also had no yogurt or sour cream & used plain applesauce instead. Added a couple extra Tablespoons flour because I added bit more lemon juice. Baked in toaster oven - 25min @ 350. EXCELLENT, TART & OH SO EASY- LEMON BROWNIE RECIPE. Jenny, you made my Aunty happy!! I will bake this again. Didn’t have much time & AMAZED how easy to prepare!! Thank you & pray you’re doing well.
Hi, Jenny, I have made this lemon brownie almost exactly the same way as you have shown here and every single soul who has ever eaten them (including myself) has experienced food nirvana...seriously! I never used the foil though, just the regular buttered cake tin with a light dusting of flour method and it has come out easily. Otherwise, I've not tampered with the recipe or the glaze (why tamper with utter perfection?). You may never read my comment and you may never make a video again, but I just wanted to thank you from the bottom of my heart not only for this and other delightful recipes but your presence, your personality, your ready wit and your charm. @@MsMars. hello, i altered jenny's recipe so that i could still enjoy these delicious treats even if i didn't have all the exact ingredients in my kitchen. I'd say I'm still using her recipe since i followed her overall instructions and measurements. also, adding less sugar was at my own preference but more importantly, the lemons in my backyard are much sweeter than the ones i buy at the store so i wanted to balance the level of sweetness in the finished product. thanks for your comment tho ~ i almost forgot about this recipe! since the lemons in my backyard are ready now, I'll be using this recipe again 🤘 happy baking!

Zest: I make mine by freezing the peel in a zip lock bag. When enough accumulates, I toss them in the blender and put them back in the freezer until used in my recipe. For orange zest use the tangerines and cuties because they have less white material than navel etc.
@@itsbuffy0205 The pith just seems to disappear, not noticeable at all. I do the same with all citrus peels. You can add lime to stir fry's with chicken etc.

Whenever I make cakes, the first time they turn out perfect, but no matter how closely I stick to the recipe the ones after that are never as good as that first lot. Not with your cakes. I've just made my third batch, these are for my partner to take home because there are none left of the batch I made on Thursday, and he couldn't believe how good they are nor how quick they are to cook. He loves them and so do I. Thank you. xx

I have made this more than a couple times with Meyer Lemons from our tree. This Lemon Brownie is DELISH. I make several of Jenny's Recipes and all are just great.

Just made this today except they were vegan. I used Just Egg for eggs and used almond milk yogurt instead of yogurt. But I used a ton of lemon zest and more lemon juice. It was delicious and you would never be able to taste the difference. Thanks Jenny for my favorite recipe!
I adore Jenny and her sense of humor. I've never been much of a baker, but she inspires me to let go of my lack of baking confidence and try her many recipes. Then sharing with my neighbors, other wise I'll have to eat it all by myself.
mmmmm that would mean even more sugar and us diabetics are on dangerous ground already just looking at it.....I think the icing is so sugary that even more would be an overkill . ....but to each his own.
This came up as a suggestion, what a treat! Highly recommend this to lemon lovers! It is outstanding & so easy. Used a springform pan for easy removal. Don’t scrimp on the lemon zest. The Best!!
Jenny Can Cook Hey Jenny .... once you put the frosting on can you put it in the fridge or freeze for a few minutes so that the frosting hardens a little? ( similar to italian lemon cookies) Thanks ... P.S. Im starting to click on the thumbs up b4 i even watch your vids lololol
NYGiants Champs I don't know about hardening the frosting. You would have to try, but try it with just two brownies. I would refrigerate one and freeze one and then you'll know.
Hey JennySo delicious. Have made 8 batches in one week.Tried a few variations, so much fun to make up new ways.I added lemon extract too. Half amount brown sugar. 3/4 cup flour. And 1/4 cup Cana flour To make. . 1 cup flour.Cana flour is chickpea flour. Purchase at Superstore in Vancouver Canada in the South Asian area. Not expensive. I'm gluten intolerant (wheat). and was trying out different flours.Third batch I'll combine: 1/3c. Cana flour, 1/3c. rice flour, and 1/3c.cake flour. To make 1 cup.I read some where that cake flour is 50% all purpose flour and 50% corn starch.So 1/3 cup cake flour is = to. 1/6 cup all purpose wheat and 1/6 cup cornstarch. I purchase rice flour in South Asian isle too. cheap.I also saw a black lentil flour that I'll try in future.Much cheaper than the gluten free Robin Hood flour. Making them as xmas gifts.
I made this for my hubby today. So easy, light and fluffy. Delicious! Only Twenty minutes to bake! I want to try this batter in other flavors, or run some raspberry jelly swirl through it.
Super recipe fast and easy, tastes really good also. Jenny is the star of the show today making her cabbage rolls also. Only had 2 small lemons so I used one for the brownie and added 1/2 teaspoon of lemon extract and replaced yogurt with sour cream.
For those who adhere to a whole foods diet, this cake worked beautifully with spelt flour and raw brown sugar. It went fast the first time I baked it, and I'll be making it again for Sunday tea while we're stuck at home during Social Distancing . kimberly lusher there are a number of lactose free brands of yogurt now. Coconut based ones would be great for this. Though they don't necessarily taste coconuts.
Lactose intolerant people often find yogurt much easier to digest than milk. The best yogurt for people with lactose intolerance is a full-fat, probiotic yogurt that contains live bacterial cultures. Greek yogurts are also lower in lactose because they are strained during processing. This removes even more of the whey, making them naturally much lower in lactose.

Step aside regular brownies, lemon brownies is taking over. I just baked this today and I must say this is so remarkably easy to make and it's so DELICIOUS! I never knew how it easy it was to make lemon glaze. Jenny, I'm going to be making more of these and giving them away. So yummy and pretty to look at too.❤️ * I removed 1 tbs of sugar from the 3/4 cup required in the recipe. That's the only change I made. And I used baking paper instead of silver foil. Omg me too. It was always so disturbing to me that I couldn't scrape out everything with a spoon. And then I discovered those silicone spatulas that can get out literally all of it. Till now it is still one of my greatest culinary discoveries 😆
I just made these 9-30-22. Excellent. I used store-bought lemon juice, lemon yogurt instead of plain, no lemon rind, and 1/4c lemon juice instead of 2 tblsp. Plus cooked them longer. Actually they are half gone and I didnt even have a chance to do the icing. Nice and chewey and not cake-like.
i just made this and mine turned out amazing 😭 I'm so proud of myself!!!! i didn't have any kind of yogurt so i used 1 tbsp of butter, but everything still worked out! i also added slightly less sugar. Delicious, we used lemon flavored Greek yogurt, and they are intensely good. Baking time was 30 minutes for our recently regulated oven. These will get added to our recipe folder for sure.

Just cut 2 long rectangles to fit over all sides of pan a couple of inches, and layer on top of each other. No wrinkles/no aluminum. (Aluminum has been shown to possibly promote Dementia & Alzheimer's.) 😟

Tip: when lining pan with foil, first form it around the Outside of the pan, then it will slip in easily

EZ change of easy 🍋 brownie recipe! My dear 94 yr old Aunty loves the tartness of lemon. What a hit! I only had fresh frozen lemon juice & NO lemon to zest. Also had no yogurt or sour cream & used plain applesauce instead. Added a couple extra Tablespoons flour because I added bit more lemon juice. Baked in toaster oven - 25min @ 350. EXCELLENT, TART & OH SO EASY- LEMON BROWNIE RECIPE. Jenny, you made my Aunty happy!! I will bake this again. Didn’t have much time & AMAZED how easy to prepare!! Thank you & pray you’re doing well.

Hi, Jenny, I have made this lemon brownie almost exactly the same way as you have shown here and every single soul who has ever eaten them (including myself) has experienced food nirvana...seriously! I never used the foil though, just the regular buttered cake tin with a light dusting of flour method and it has come out easily. Otherwise, I've not tampered with the recipe or the glaze (why tamper with utter perfection?). You may never read my comment and you may never make a video again, but I just wanted to thank you from the bottom of my heart not only for this and other delightful recipes but your presence, your personality, your ready wit and your charm. @@MsMars. hello, i altered jenny's recipe so that i could still enjoy these delicious treats even if i didn't have all the exact ingredients in my kitchen. I'd say I'm still using her recipe since i followed her overall instructions and measurements.
also, adding less sugar was at my own preference but more importantly, the lemons in my backyard are much sweeter than the ones i buy at the store so i wanted to balance the level of sweetness in the finished product.

Zest: I make mine by freezing the peel in a zip lock bag. When enough accumulates, I toss them in the blender and put them back in the freezer until used in my recipe. For orange zest use the tangerines and cuties because they have less white material than navel etc.

Whenever I make cakes, the first time they turn out perfect, but no matter how closely I stick to the recipe the ones after that are never as good as that first lot. Not with your cakes. I've just made my third batch, these are for my partner to take home because there are none left of the batch I made on Thursday, and he couldn't believe how good they are nor how quick they are to cook. He loves them and so do I. Thank you. xx

@@Justmeandmythoughts55 I made the no knead bread at least 7 times since December. I recommend that one. If you do not have a Dutch oven you can make the recipe for no knead rolls.
I plan to try many more.

Just made this today except they were vegan. I used Just Egg for eggs and used almond milk yogurt instead of yogurt. But I used a ton of lemon zest and more lemon juice. It was delicious and you would never be able to taste the difference. Thanks Jenny for my favorite recipe!

This came up as a suggestion, what a treat! Highly recommend this to lemon lovers! It is outstanding & so easy. Used a springform pan for easy removal. Don’t scrimp on the lemon zest. The Best!!

Hey JennySo delicious. Have made 8 batches in one week.Tried a few variations, so much fun to make up new ways.I added lemon extract too. Half amount brown sugar.
3/4 cup flour. And 1/4 cup Cana flour To make. . 1 cup flour.Cana flour is chickpea flour. Purchase at Superstore in Vancouver Canada in the South Asian area. Not expensive.
I'm gluten intolerant (wheat). and was trying out different flours.Third batch I'll combine: 1/3c. Cana flour, 1/3c. rice flour, and 1/3c.cake flour. To make 1 cup.I read some where that cake flour is 50% all purpose flour and 50% corn starch.So 1/3 cup cake flour is = to. 1/6 cup all purpose wheat and 1/6 cup cornstarch.
I purchase rice flour in South Asian isle too. cheap.I also saw a black lentil flour that I'll try in future.Much cheaper than the gluten free Robin Hood flour.

I made this for my hubby today. So easy, light and fluffy. Delicious! Only Twenty minutes to bake! I want to try this batter in other flavors, or run some raspberry jelly swirl through it.

Super recipe fast and easy, tastes really good also. Jenny is the star of the show today making her cabbage rolls also. Only had 2 small lemons so I used one for the brownie and added 1/2 teaspoon of lemon extract and replaced yogurt with sour cream.

For those who adhere to a whole foods diet, this cake worked beautifully with spelt flour and raw brown sugar. kimberly lusher there are a number of lactose free brands of yogurt now. Coconut based ones would be great for this. Though they don't necessarily taste coconuts.
Lactose intolerant people often find yogurt much easier to digest than milk. The best yogurt for people with lactose intolerance is a full-fat, probiotic yogurt that contains live bacterial cultures.
Greek yogurts are also lower in lactose because they are strained during processing. This removes even more of the whey, making them naturally much lower in lactose.
Okay, it’s me, the hopeless cake maker - however, I had a go at this today and it turned out brilliantly. I can’t believe I have made a cake that hasn’t ended up at the bottom of a trifle!!!!! So grateful to you for the recipe.
Step aside regular brownies, lemon brownies is taking over. I just baked this today and I must say this is so remarkably easy to make and it's so DELICIOUS! * I removed 1 tbs of sugar from the 3/4 cup required in the recipe. That's the only change I made. And I used baking paper instead of silver foil.

Omg me too. It was always so disturbing to me that I couldn't scrape out everything with a spoon. And then I discovered those silicone spatulas that can get out literally all of it. Till now it is still one of my greatest culinary discoveries 😆

I just made these 9-30-22. Excellent. I used store-bought lemon juice, lemon yogurt instead of plain, no lemon rind, and 1/4c lemon juice instead of 2 tblsp. Plus cooked them longer. Actually they are half gone and I didnt even have a chance to do the icing. Nice and chewey and not cake-like.

Delicious, we used lemon flavored Greek yogurt, and they are intensely good. Baking time was 30 minutes for our recently regulated oven. These will get added to our recipe folder for sure.
This looks great; going to make for holidays! Thanks Jenny! TIP: for baking: Parchment paper is so much better; cleaner. Just cut 2 long rectangles to fit over all sides of pan a couple of inches, and layer on top of each other. No wrinkles/no aluminum. (Aluminum has been shown to possibly promote Dementia & Alzheimer's.) 😟

No WAX paper in the oven! It's parchment paper. Wax paper is not for oven use because it will melt into your food.
