I have an issue on the last step where the pull up bar doesn't line up with the holes so I'm unable to bolt it in place.

Might be a little late here but try lowering the machine sideways so its easier to insert the screws

Can't tighten the nuts due to plastic at the other end

locking nuts to stop them them coming loose. I used an impact drill and spanner on the other side was done in 10 minutes

Solved it on my own after a few tries. Use the two wrenches together. One wrench to hold the nut and the other to turn the bolt. Hope it works for you too 🙂
