    Things that you need:
    10 whole fish
    2 cups of cornmeal
    2 tablespoons of salt
    1 tablespoon of seasoning salt
    1 tablespoon black pepper

    That’s the ONLY WAY to cook croakers!! Perfect size n all .only thing I do different is cut off those top to fins, they tend to be a lil bitter. We were raised up eatnm like dat, ole cuntry boy from CLT dats all. Use ta use corn mill but switched to House Autry Medium Hot years ago , more of a smoother fry for me. Anyway,give me bout 4-5 ofm that size,some light bread n mustard n you can leave me alone for a while…..shiddddd!!!! IJS…

    That is how we fry croaker in Virginia.

      Born and raised in Central Virginia. We don't fry ours like that. Spring, summer, fall & winter, everyone seems to have outdoor gas fryers. We cook several fish at once. We season EACH individual fish with Old Bay and pepper only. No salt. Old Bay is salty enough. We get that Walmart Bag. Drop the mill in the Walmart bag, drop the fish in the bag and shake, shake, shake. Turn the bag upside down too. Drop the OPEN fish in the hot grease. We never fry our fish with the fish closed up. This is the older generations way.

      @@Chacolite Yes you do, and it is delicious. However, I am from the Tidewater/ Hampton Roads area. Sea People. We have a heavy blend of North Cakalaky, so this butcher style is normal for me.

      @@VogonPoetry , hi. I am on other side of the JR bridge. Smithfield side. I just never have seen anyone fry a fish folded. Not saying it's wrong but Croakers are thick fish, especially if you get a big one. Frying it folded, how do you know if it is thoroughly cooked. And everyone cooks differently.

    I'm from North Carolina and I grew up with croaker fish. I am now in Dallas Texas and they know nothing about that fish even at the fish market if you can find one in Dallas they love catfish catfish catfish catfish catfish in Dallas Texas. And I'm tired of it.

      I cooked them for about 5 minutes or until you see them floating to the top and the deep fryer is easy to clean with some dish liquid.

      You can cook it between 3 to 5 minutes on 375F or whenever you see the fish float to the top of the oil.
