    This is the best way I ever seen cuttings being cleaned and cooked the absolute correct way. My first time I ever clean them myself I done it this way. It seemed right after learning and cooking them myself

    I have been eating chitlins for years, i would watch my Mother clean the old 10 pd. red bucket [ Wilsons ], she always pulled the inner lining or membrane off , she would start with 10pd, after cleaning, it would be about 5pd, then after cooking, it would end up about 3pd, now i know why she would cook them right after the holidays, and would tell me not to tell any one we had chitlins, after all that work and time, they seem like it was never enough.

      It's because this is the basic recipe for Brunswick Stew. People don't usually put all of this in Chitterlings because they actually want to taste the meat. In the stew some add shredded Chitterlings, Hogheads,Chicken, and shredded beef, corn and tomato.

    Hi Chef, these really look good. I will try this recipe and I just subscribed to your channel. Just a couple of things. Do you remove the membrane lining from the chitlins? Also one suggestion on the very boil to remove the fat and impurities you should boil for about
    30-60 minutes. There will be a white foam floating on the top of the water. That is what you want to pour out and rinse the chitlins off and then start with fresh pot of water. Love your channel.❤

    Those look like they'd be delicious served with rice.
    Experienced chitlin cooks say the raw ones sold in buckets are always dirty and/or old. The cleanest brand is bagged "Aunt Bessie's", but it still needs thorough washing.

  • @Renville87
    @Renville87 ปีที่แล้ว +3

    So I’m gonna try the 2nd I’ll method because I’m very very very cautious of my chitlins not being clean clean. I clean every single piece then I go back and rinse and inspect every single little piece making sure I didn’t leave not even the smallest speck of anything I may have missed. Then I rinse them in warm water 4 to 5 times until my water is clear. After all that I drain them and place them in a new clean bowl where i pour some clean water add 3 lemons sliced squeezed with a couple tsp of white vinegar and set them in that for an hour in the fridge while I dice my celery, bell pepper and onion. I don’t use potato because mines don’t smell like anything but the seasoning I put in. After I got my veggies cut I put them in a pot with chicken stock and I take my chitins drain rinse again and add them to the pot to cook. I’m gonna take your method and try and maybe that will liming all my extra cleaning i do.

      Instead of letting them sit in lemon and vinegar par boil them with that, then rinse. They should be ready to season and cook. I par boil mine more than once just to ensure they are clean, clean.

    I’m a country gal was raised by my Native American mother and I’m actually ashamed to say I’m 60 and haven’t ate chitlins sense my Ma passed.. I bought me some chitlins yesterday and have been watching recipes on TH-cam and I do remember my Ma boiling them to clean them and she did take off all the membranes before boiling them. As a child I remember this as well as having them chitlins deep fried as well. There’s two recipes on TH-cam I want to try and yours is definitely one of them.. only question I have is did you not pull the membrane off it first ? I’m very curious to know. Also like to add we raised our own hogs there was hardly anything that went to waste, I love hog brains in some scrambled eggs, as well as mountain oysters, and I did have to clean the chitlins coming freshly out of the hog gross I’m glad I don’t have to do that anymore but would gladly do it to have one more moment with my Ma.” Thanks for sharing your wonderful recipe..God bless you!!!

    This will be my first time cooking chitterlings in a crockpot and I have a size 3 1/2 one. Would this whole 10lbs of chitterlings with 4 cups of chicken broth OR water?
    Planning on cooking this next month of August 2023, I haven't had chitterlings in so many years, I already have 5lb clean and in the freezer, I wasn't able to clean 10lb at one time because of my back. Thanks for the video. Please respond!!
