Actually its the Frank Hot Sauce that does. I tried this ( flour, egg, frank hot sauce, no mustard) with fried cauliflower and the breading came out so fluffy and crunchy
Let me just say, the "let them rest a little bit" part goes a looooong way. I let them sit in my fridge after coating and fry them up..and 😮💨 that skin was disrespectfully crispy. Hats off for that bit of advice and the mustard in the egg wash!

I love fried catfish. And I love this recipe. So, what I do is store the seasoned flour in a airtight container and the dry ingredients in another airtight container. Then, when I am in the mood for catfish, I just crack a couple eggs, add the hot sauce, mustard, and seasoning and the whole thing comes together quickly.

Mine came out perfectly!!! I followed the recipe with a few minor changes but it was my first time frying catfish and it had so much flavor!!! My family loved it 😊
I had 1.5 lbs catfish nuggets - didn’t have cornmeal. I used 1 cup of flour + 1tsp baking soda + Old Bay + Garlic + Onion Powder. For the wet batter - I didn’t have hot sauce so I just mixed 2 eggs with 2 tbs mustard + old bay seasoning. I fried it in avocado oil and it turned out deliciously! Kinder’s Lemon Pepper dusted on the finished product took it to the next level!!!
Wow I never seen catfish cooked in that way. And my brothers from Mississippi never fixed it that way. Just Louisiana spicy catfish breading and in the grease. But thanks for sharing this recipe and it's a must try tomorrow. ALOHA from Kansas.

I tried eggs, milk , eggs and milk. nothing has been a better batter than mustard. It is crispy, slight flavor afte fried and the color. Unbeatable

What seasoning is put into the eggs and mustard?
Adding the mustard to the egg batter was a great suggestion. I used some tabasco instead of the Red. Kept the oil +/- 350 degrees. Great results!
