How to Celebrate Samhain + Beef and Barley Stew in a Pumpkin

  • How many times can I say "so" ? How many times can I say "now..."? We should make this a drinking game.
    Beef and Barley Stew in a Pumpkin:
    1 T olive oil
    2 small onions, diced
    4-5 large stalks celery, diced
    3-4 large carrots, diced
    2 c. diced potatoes
    3-5 cloves garlic, smashed
    1.5 lbs london broil, cubed
    1/3 c. flour
    1 t. dried oregano
    1 t. dried thyme
    1 t. black pepper
    1 c. pearled barley
    2 quarts beef broth or bullion/water equivalent
    1/2 bottle of red wine
    1 pumpkin or edible squash, decapitated and cleaned out
    salt to taste

    Preheat oven to 400 F. Bring a large pot to high heat and add oil. Add meat and sear on all sides. Add all vegetables, spices, and flour. Stir well. Add lit and transfer to oven for ten minutes.
    Clean out pumpkin and salt generously, brushing with oil if needed. Transfer to a baking sheet and place in oven. Alternatively, remove stew from oven, add all ingredients, salt to taste, and add to pumpkin.
    Place pumpkin and/or dutch oven back into the oven for 2-4 hours.
    If you're still using a dutch oven at this point, remember to take it out and stir it every thirty minutes so that it doesn't burn on the bottom.
    After two hours, taste and adjust. Then return to oven for another few hours until pumpkin flesh is tender.
    Serve with a scoop of pumpkin and enjoy hot!
