    Creamy Salted Egg Yolk Calamari (Squid/Sotong) Recipe 咸蛋奶油苏东
    Ingredients:
    Serves 4 pax

    140g (4.93 oz) calamari - cut into rings
    3 salted egg yolk - raw (use egg white of 1 salted egg to marinate the calamari. Steam all egg yolks)
    Some cornflour (cornstarch)
    30g butter
    3 cloves garlic - chopped
    2 sprigs of curry leaves (you can use 0.5 tsp of curry powder or dried curry leaves)
    3 bird eye chilli - chopped (optional)
    300ml (10.14 fl oz) evaporated milk (Carnation milk)
    1.5 tsps salt
    0.5 tsp sugar

    Hi chef Roland!! Looks yummy and pretty easy to make! My husband loves calamari!! Will surely try it but one question...with what can I substitute evaporated milk ? Some milk or cream perhaps?? Will the taste change?

    Hi, I try your method but when I mash the salted egg York it didn’t become very fine & instead it became very sticky like texture like a mashed potato but it’s not very soft too so when I cook it to the end it didn’t appear to be like yours as shown Instead the egg York become like cereal type 😅. May I know what can i do wrong?
