Love this idea, MurrayAronson - latkes are such a traditional Eastern European Jewish Chanukah dish, but we Jewish people have just as long a history in Spain, and these fritters are so close to the Ashkenazi traditional latkes, they're almost exactly the same. For anyone else thinking about trying garbanzo flour instead, I had poor results. The batter was really runny. I kept adding more garbanzo flour to try to thicken it up, and it didn't help. I ended up having to add wheat flour to get fritters with a more vertical structure. Maybe there's something else that has to be added to get garbanzo batter to behave like wheat-based batter, but I don't have enough experience with gluten-free cuisine to know what that might be.

Most Mediterranean cuisines are healthier than much of the "regular" food eaten in the US (generally speaking, we Americans tend to eat too much meat, too much sugar, too many over-processed foods and nowhere near enough fresh veggies and whole grains). Also, on a personal note, why on earth would you care what our host's religion might be?

And the reason that I asked is simply because I am a Christian and the way that I have been brought up in the way that I have learned is that to be very careful what business businesses Ministries and other places that I sold my money into and I wanted to join Spain on a plate, however if it does not line up with my values that I'm unable to sew into it as I would have liked to and that really is the only reason. There are plenty of other businesses that I have taken my money out of because they did not line up with my Christian beliefs so it's just a boundary for me to protect me as a person it's not something that he has to answer I just wanted to know so that I could join and become a patron and that is the only thing.

There is more fast food popping up in Spain and processed foods available in the super mercados, so they're catching up to non-Mediterranean countries. As for the Religion question, I understand what you are saying and though I may be a "Christian", it's inappropriate. Jew, Muslim, Christian, they ALL have bad aspects, and your explanation leads me to believe that you are one of the bad ones.
