I feel like it would add too much stuff to the sandwitch, I'd do just a little tahini for a similar flavour (I mean you put it in hummus anyway), but less mass.
Looks to me that it needs some red onion, and a splash of red wine vinegar and olive oil. When I was a vegetarian I would get basically this^^^ on a 12" at subway- minus the feta. I called it a "salad on a bun"
Yeah, back when Subway did the $5 footlongs I'd frequently get the veggie sandwich with everything on it. Very good, not too dissimilar to what this ended up being!

This sandwich was a solid 9 for me before the plus-up, but the pepperoncini caused it to lose all points (my stomach cannot tolerate any capsaicin).

A nice carrier and accent to the acidity and pungent taste of the cheese would be some rye toast as the bread component. 😉
