We'd motor out to my uncle's favourite spot at the southern tip of Cortes Island in the Straight of Georgia off of the east coast of Vancouver Island. Y'know... where you can catch all the best EGGS.

I'd probably chop shrimp and tomato, then scramble them into the eggs with some Old Bay or the seasoning you used and toss in that white sauce. Personally, I'd have to go easy on the horseradish, as I find it overpowering. I'll try this out and let you know!

this is exactly the kind of thing I'd throw together in the midst of midnight desperation, douse in A1 tnh sauce and absolutely devour it, then wonder why I dont feel so good. I wonder if cocktail sauce instead of just tomatoes would lend more to the shrimp cocktail taste lol

Sadly, the egg fishing industry has depleted the Salish Sea, and these days, you can hardly find any eggs in the water.
