  • How To Make Vegan Lentil Soup | Easy and Weight loss Recipe
    This is a gorgeous little vegan Lentil soup that is freezer friendly with easy-to-find ingredients in your local supermarket. This is my go-to recipe if I really don't feel like cooking. I made this as simple as possible. No frills. Perfect for the cold weather.
    ***
    𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
    Olive Oil, for cooking
    1 Brown Onion, diced
    4 Garlic Cloves, finely chopped
    1 cup Brown Lentils, soaked overnight
    2 medium Carrots, finely chopped
    1 stalk Celery, finely chopped
    1 L Water
    1 large Zucchini, finely chopped
    2 Tomatoes, roughly chopped
    ½ bunch of Fresh, Flat-Leaf Parsley, roughly chopped, for garnishing
    Salt, to taste
    Black Pepper, to taste
    𝗠𝗘𝗧𝗛𝗢𝗗
    Preheat a pot to medium-high and drizzle in some oil.
    Add the onions and garlic and cook until translucent.
    Season with salt and pepper and continue cooking for one more minute.
    Add the lentils, carrot, tomatoes and celery to the pot, stir and pour in the water and tomatoes.
    Taste and season with more salt and pepper if needed.
    Bring to a boil, reduce to a simmer and cook with a lid on for 30 minutes.
    When the lentils are cooked through, stir in the zucchini and parsley and cook on high heat for 5 more minutes.
    Serve and ENJOY!

    I so love this hearty soup and highly recommend adding Paprika, cummin, coriander, frozen peas at the end like the zucchini and squeeze lemon on top after serving, its super delish! Body mind and soul nourished! 👏😋

    I generally soak my legumes and grains in an acidic medium for 24 hours before cooking them. Nourishing Traditions is a great book on the topic. The smaller the grain/legume the longer the soak. Is amazing for brown rice turns out fluffy and soft. Making this soup on the weekend and yes my lentils are soaking 😀

    Ya, Lentil soup sounds good 🤗, I could go for a soup anytime, as here in Germany via Munich where I live, for the month of March, it's still quite cold here, and still waiting for the warm month, so, ya, lentil soup sounds good, hits the spot right into the tummy for something warm. 😊🤗

    Quick question, can you substitute green lentils for brown? I’m hoping so as I haven’t been able to find organic brown lentils here except in a can. Am planning to try green, but wondering if it will make a lot of difference and if so am I better off using canned brown lentils?

    Question for you Cynthia, in regards to the " lentel " bean situation, if one would like to cook lentel right away without having them soaked over night, can one just so rinse them under water for the longest time under water so that one could cook the soup right away, you know what l mean?
    I'm now in the mood for it right now, but l don't have the patience at the moment to wait over night just for so rinsing, would it be ok that l now just so rinse them underneath the water in my sink, you know what l mean?

      It's needed to soak overnight otherwise it will not be same as this recipe. x

      More herbs, eggplant, but the tomatoes 🍅 make it so much depth of flavour.

      @@petranachtsheim2878 Not at all Petra, results from a compatibility test report advising certain foods (for me) may cause certain symptoms while other aggravate the symptoms, so I'm eliminating tomatoes for a while.
