My friends and I love love LOVE Mexican food. We all love a good dollop of sour cream with our Mexican food. And we all know that dairy sour cream is just fatty and really not that great for us. Sooooo, putting on my wholefood chef's jacket, I went to work...and work it did. A very successful dairy-free Sour Cream was born! #genius This recipe for a NON-DAIRY Sour Cream is EPIC in texture, colour, and flavour, its consistency is outstanding and best of all besides the taste, it gives nutrition to the body and is gentle on the liver, unlike dairy sour cream, which is quite hard on the liver. And considering that the liver is the second main organ in the body, I want to make damn sure I am nourishing my organs as much as I can when it comes to eating food. My sour cream is now your sour cream and I trust you will share it with your mates.
    𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
    1 ½ cups Cashews
    1 Lemon, juiced
    1 Lime, juiced
    Water, as needed
    Himalayan Salt, to taste
    𝗠𝗘𝗧𝗛𝗢𝗗
Add the cashews, lemon and lime juice, and a few tablespoons of water to your Vitamix.
Blend until creamy and completely smooth.
Pour in the water while blending to get the consistency you want.
Serve as a dip, in salads, etc.

If you put the lemon in the microwave for 30 seconds it will soften it and you get more juice out of it.

As someone with food allergies out the ass I really am excited to give this a try. Been attempting to find alternatives to literally everything that is made in all cuisines (yes I do mean, EVERYTHING). And along the lines of dairy free, this is something I’m going to add to my cooking playlist. You’re a peach.

I was a little skeptical of trying this recipe because I have tried other cashew-based sour creams before and didn't really like them. I was also wondering if the addition of the lime juice would make it taste too much of lime. Boy, was I wrong! What a delicious end product! As I am switching to a whole food, plant-based diet, I have really been missing the coolness of sour cream with spicy dishes. This went perfectly atop my spicy black beans and rice for dinner. Thank you for your enthusiasm and your delicious recipes😃

Soaking cashews creates an incredible creamy texture for recipes, but it also boosts nutrition! Soaking nuts (of any kind) helps remove phytic acid, allowing our bodies to get more nutrients from the nuts, and makes them easier to digest.

Chef Cynthia Louise Hi Cynthia ~ I have no idea what went wrong. I followed your instructions exactly and used my Vitamix. The texture was perfect but I could not get the cashew taste out even trying to add more of the citrus. Since I was hoping to use this as a garnish on my tacos I added ground cumin but there was just no making this compatible with taco flavors. Before I added the cumin I thought to myself it would be a good dip to go with cut apples or celery - things that pair well with cashews. Do you have any suggestions on perhaps another nut that might work? I really would like to have a non dairy option for myself...as for the hubby, thankfully I had picked up a container of sour cream for him!!

I just tried this but substituted lemon juice for 1/2 tsp lactic acid. Also my lime was extra large and so the sour cream ended up with too much of a bite. Firstly, a question... I don't have a powerful blender, just a stick/immersion blender, would it be easier to get the smooth texture by using hot/boiling water for this or better to "soak me nuts"?
(I'm Aussie and that, that was the Aussie-est tub I've seen on here in ages!)
I'm allergic to all animal milks and everything derived from them. It sucks.
I've been trying to find dairy-free recipes for basic cooking staples (sour cream, yoghurt, cream cheese, cream for savoury cooking, gelato...) for 2 friggin years! I think I'm close to achieving a good home made coconut milk chocolate...

    • @ChefCynthiaLouise
      @ChefCynthiaLouise  2 ปีที่แล้ว

      @@ChefCynthiaLouise Hi Chef,
Thank you so much for your advice and encouragement (and the recipe of course).
I wanted to let you know how the first attempt turned out and get your opinion on a variation I'm thinking of... my stick blender did an ok job, a little grainy but I did expect that (it's not a very powerful stick blender). I didn't use salt because my on-hand cashews are already salted. (I didn't realise there were also some macadamia pieces mixed in until to late, but they were inconsequential).
The flavour was great and worked for my fridge pasta dinner. It will be phenomenal with Mexican dishes and as a stand alone dip.
I'm thinking of swapping the citrus to a subtle vinegar (perhaps a Japanese white rice vinegar) when I'm cooking more hearty European and winter foods. Things like borscht, goulash, stroganov, soups and a few family devised ones. I think using the light citrus notes will alter the flavour profiles too much, but a vinegar would (?) be more neutral for those heavier dishes. What do you think? Would it work? (I hope I'm on the right track...). I really appreciate the help you've given me. I'm subbing to the channel and sharing the link with my Ma. 🌹🌹💙

About 3-5 days depending on storage and tempature. I usely find it doesn't last long because it gets eaten.

I know you are not WFPB eater, but I changed last year... in my 60's and sick of being tired heavy and yuck... so watched the good doctors Dr Esselstyn etc on eating plant based and what dairy meat do the body... we are no baby animals and should not be drinking animal milk products filled with hormones for growth and nasties.... you will find that like in the USA most companies drive the policy makers.... I am so much better for the change.. but you have to listen and listen to why we should not eat meat / dairy.. it very enlightening...
