I lived in San Vito, Italy (Southern) oh, so fortunate, my landlords were the BEST!...and the food!....30yrs later I have yet to smell/taste/eat the goodness of Italy...

Anche mia madre faceva la focaccia in padella, sul gas a fiamma bassissima come le aveva insegnato mia nonna perche' non tutti avevano il forno per infornare ma un camino, si', per cucinare. Poi, col gas si e' un po' modernizzata. E' davvero bella questa signora, mi ha fatto rivivere tanti bei ricordi della mia infanzia e giovinezza, ma mia madre la faceva con le cipolle novelle, le sarde sotto sale e il pepone dolce cioe' la paprika. Signora Fenia, le auguro ancora 100 di questi giorni insieme ai suoi cari e buona fine e buon principio. Un bacio.
Mi sono commossa leggendo il tuo commento. Anche mia nonna metteva e mette la cipolla fritta in alternativa all'altra ricetta con aglio.... Le sarde sono tradizionali, le acciughe più comuni e nei tempi moderni ho conosciuto famiglie che usano perfino il tonno... La paprika anche viene usata fresca, sono dei peperoni usati talvolta dolci, talvolta quelli piccanti e a volte mix... Mia nonna mi confesso' che spesso scopriva solo dopo quanto veniva dolce o piccante.... Questo anche perché a sud esistono più varietà di peperoni sia dolci che piccanti e a volte perfino al mercato venivano venduti mischiati assieme... Sopratutto i verdi, usati nel napoletano fritti con aglio.

Ecco, io non voglio apparire rigida, ma se la gricia si fa col pecorino perché devi spacciarla col grana padano che non ha né quel caratteristico odore né il caratteristico sapore? Vorrei solo che non affibbiassero nomi propri a preparazioni variate. Scusa lo spunto polemico, non era certo rivolto a te che sei stata così tenera da condividere i tuoi cari ricordi con me sul web. vinegar (acid) inhibits proteins forming when making pie dough - I'm guessing lemon juice does the same thing, and make the dough more tender
