Celebrate with 104 year old Irma! She makes tortelloni for her birthday! | Pasta Grannies

- Irma is a our oldest Pasta Granny and she was keen to invite us back and make tortelloni.
She made a large quantity, I suggest you have the amounts. Use 300g 00 flour and 3 eggs for the pasta. for the filling, allow 100g cooked, squeezed dry, chopped Swiss chard, 150g ricotta (drained), a tablespoon of chopped parsley and a tablespoon of double (heavy) cream, 50g 30 month (aged) parmigiano (or to taste), salt and pepper.
For the tomato sauce, use the best passata you can find (400ml) heat it up with a little extra virgin olive oil and let it simmer for 10 minutes or so. Take it off the heat and melt 30g or so of unsalted butter into it. More Parmigiano to serve.

Oh…Irma is a sweetheart and she brought tears to my eyes!! She has a wry sense of humor and is more alert than someone half her age! I might have rolled 100-120 pastas in my life; I am astounded at how she makes it look easy to prepare a perfect 6 egg, 1 kilos dough. What a lady!

I'm grateful to see these pasta grannies not just for their recipes but because I love hearing about their lives. They have been through so many things in life and we should listen to their stories. What a lovely, lovely grandmother, she reminds me of my own grandmother who was from the island of Crete, and she was so beautiful, always making her dough every day, putting the sign of the cross in there and always praying for God to give her a loaf of bread or whatever she made with her dough!!!! salute, salute Noni!!!
Happy birthday to this lovely lady. Yes, regular exercise helps but to make it to 104, many other things come into play. Practically all of the ladies on this channel live in the country or small towns, where it's easier to lead a simple life growing their own food and/or getting it from local sources. Another common factor is the lack of stress in their lives, evidenced by their healthy attitudes, even though they all seemed to have worked very hard all their lives. They acknowledge hardships like poverty but they don't dwell on it or complain. They're obviously quite happy with what they have and don't expect much. In short, they have a very high degree of mental and emotional health, which contributes to their physical health. Of course individual genetics is important too.

I can't wait to go to Italy and find a beautiful town to live in. I have always said I want to live until I'm at least 105 years old. I love making pasta for my family and friends, when she said I will know I did good when everyone tells me how good it is! She also said I love pleasing people, and so do I. I'm also a good person and I love to dance! I just love her. In three years I will be in Italy, and I'm going to find my ancestors home towns in Sicily. I'm going to buy some of the things these pasta grannies have to make their magic. Thank you Vickie and your team for bringing these incredible women and their wonderful families to us all around the world. Ciao, and she is really famous now!!! She's amazing!
