La signora Albertina makes tortellini that look so much like the ones my Bolognese grandmother used to make, although the filling of my family's recipe contains (I believe) more ingredients, and we keep passing on a contraption (that my grandfather made), to cut the pasta into circles instead of squares, which makes tortellini a little less pointy. I also want to say to all the unlucky who haven't ever tasted tortellini fatti in casa like these ones, forget the notion of tortellini that you might already have, perhaps from a restaurant or store bought. Everything, from the taste, the consistency, the aromatic flavour of the spices, puts this dish on a class of its own. This is, truly, a meal for the Gods.

I had the pleasure of growing up in Emilia with my grandparents and aunts. I think everybody should have the luxury of waking up on Christmas morning smelling tortellini (we called them cappelletti in my own town).

When she taste tested the raw mixture it gut punched me right in the feels and memories. My friends thought it was so weird and gross my mama and grandma did this with homemade fillings and meatball mixtures but to me it was normal. I still do it to this day. As my mama says “a little taste won’t hurt nothin”
