    I am from n.y. but now live in georgia. Back home I would AlWAYS buy these at my local bakery in town ( the best bakery in our area) and Always get as much as was available. On my recent trip to N.Y. to visit family I made sure the day that I was leaving to come back home , to get up early and run to the bakery and purchase All they had to bring back with me. There are NO GOOD ITALIAN bakeries here in this state :( So NOW I CAN MAKE THESE...... "YESSSSS" They are SOOOOOO GOOD. It takes an ITALIAN TO COOK REAL ITALIAN FOOD.... NOTHING LIKE IT.. Anise christmas cookies ( TERRELS ) are the BOMB also . Thanks so much ROSELLA AND NONNA.

      Have you ever been to Eataly in NY? They have lots of Italian products! Actually these Venetian cookies are not Italian but Italian American

      @@gnamorfra I had only been to little italy in down town manhatten. Then it was known for all the italian restaurants in the area that had been populated by italian families that had immigrated from their respective countries. and opened eateries and bakery shops and other businesses that made the area a very mixed population. We had ALL kinds of cooking smells filling the hallways of my building where I lived and you kind of knew what someone was making for dinner.... and everyone knew each other by NAME ... Things have certainly changed . I do love these rainbow cookies and I don't care if they are Italian or not because they are just cookies . I make my own homemade almond paste for these and have made them 4 times for the recent holidays and gave to family and friends and they came out perfect every time. They can also be frozen for ever as long as you wrap them very well. You got me thinking I should make some more !!! :0)

      @@zulmabontiffe487 very nice! I've been to little Italy in NY almost ten years ago... I was referring to Eataly as a huge "shop" (I don't know how to define it) where they sell every kind of Italian product... It's a worldwide chain

      I feel you! Same here. Georgia is no where near as culturally diverse as Ny or convenient.. They are getting there, but of course long way to go as far as different cultural foods.

    almost all of my family live/grew up in Brooklyn, NY and one of my favorite memories is going down to an Italian bakery and picking up a box of rainbow cookies! :)

    I really look forward to using this recipe. I have some friends who transplanted from New York/New Jersey to Missouri, and they talked about their neighborhood bakeries having these. I want to surprise them with some Christmas cheer, and this is the recipe I know has to be great. Thank you.

      Your friends know what they are talking about.. Nothing like a N.Y. bakery for sure.. I am from N.Y. and now live in the state of Georgia and if I could drive or fly EVERY DAY to N.Y. just to get fresh baked BAGELS, and ROLLS and good ITALIAN bread , I would..... lol I hope your friends can find a GOOD bakery in their home town. I MISS N.Y. and the snow and autumn... there's NOTHING LIKE N.Y.

    I made these cookies followed the recipe to the T, purchased a food scale divided them evenly. I did one later apricot and one layer raspberry. Came out delicious.

    Hi! I have those thick mini metal pans. Can I just spray them or do I have to use parchment paper? Worried if the cakes will stick to the pan when turning them over.

    I made these for Christmas 2018, thank you for sharing the recipe. They were the best rainbow cookies we ever had. With the cost to purchase these at least 10.00/pound and then a crap shoot if they taste good. This recipe is awesome!!! Thank you so much! BTW they taste even better sitting a couple days. Moist, and delicious. The only problem I had was cutting them, I must have put the chocolate on too thick cause the chocolate cracked when I tried to cut them. Any suggestions?

    How long should these stay in the oven? I use 10 x 6 tiny cookie sheets. I'm guessing you need those brown edges because all of my cookies sheets stuck and I had to throw everything away! Surprised you did not spray or papered the cookie sheets.

    I have made these many times and have used orange jam also. Orange and chocolate go together. This recipe is very versatile and can be frozen too. I make enough to share and freeze , just wrap them in freeezer paper first then in aluminmum foil. They will last forever. Cheaper to make than to purchase in a bakery as they are expensive pr. lb.( $7-8 ). I LOVE THESE !! When I am in N.Y. I go to NERIS Bakery in Port Chester and get several lbs. to take back home as they make the best rainbow cookies. Do visit them when in the area... WORTH THE TRIP.

    Aww, she wants to help her nonna and nonna is letting her, even though she's not perfect. Cecilia is adorable. The recipe looks great, I'd be so afraid of not lining and spraying my baking sheets for this, and having everything stick, those ingredients ain't cheap lol.       Hon, these aren't red, green, white because of Christmas, these are Italian flag cookies....which is red, green, and white...You make and eat these all year long in those colors...

    Thank you Nonna Cecilia, this is my favorite cookie recipe, actually I think its the first cookie I learned to make. I know if you warm the jam, it spreads easier. If I wasn't making these for others, I'd make them with strawberry or raspberry every time lol! Thank you!

      Oh Nonna. I grew up in Manhattan in the 60’s. It was always a special treat to have these cookies during Christmas. My dad would send us to Brooks Bakery down the street to pick up a box. The best cookies I’ve ever had. Thank you so much for showing us how to make them. They’re magical ❤️.

      You can make your own nut paste with a nut that's more readily available. Just put the nuts and sugar into a food processor and process until it forms a paste

    Have always used seedless raspberry preserves and warming it first helps it spread easier.

    Oooo she cuts it while the chocolate is still wet. Smart! All these other recipes I've seen have you waiting until it's hardened to cut it and I always wondering "what about cracking?" Granted the used vegetable oil to prevent this, the thickness of the layer will still possibly allow it to crack...

    I’ve made these a few times and they are delicious - but I have trouble cutting them the chocolate cracks pretty badly so they don’t look very pretty, any idea what I might be doing wrong?

      Don’t wait for the chocolate to completely harden to cut them. Cut them while the chocolate is still a bit soft and leave them on the tray/cutting board to finish hardening.

      Just cool on the counter. Nonna Cecilia actually lets one side cool over night before doing the second side!

      Rossella, they did come good, especially for my first time...next time maybe I'll try to cut with a different knife. (maybe Santa will bring me some Nonna Knives, I've been a good girl....don't believe otherwise LOL)..the chocolate was breaking uneven....but it didn't change the YUM factor :) Happy Thanksgiving to you and your family too!!!

    Can you put the first layer of chocolate in the refrigerator for a bit?
    Or would that make it too hard and cause it to crack?
    It’s hot in my house. Not sure the layer on the bottom will melt.

    Mine dough didn’t seem to have the same thickness as Nina. Maybe a smaller pan would lift the dough and each layer would be thicker. She’s isn’t say which size. My ends were dry.

    The video shows covering only one side with chocolate and your printed recipe says both sides... I know how difficult it is to turn over chocolate side to cover side #2... do you have video showing how to chocolate both side.

      You have to wait for the first side to dry completely before you do the other side. Usually takes a few hours. Nonna dries hers overnight!

      nonna is cutting without second side chocolate covered,, thought she was finished.. how do you turn over. she said wait for choc to dry on first side before cutting...

      +Dolores Tacoma The cookies that we cut have both sides of the chocolate covered. We switched out the one with one side covered for one with both sides which I clearly said

    I made these cookies and they were delicious but my chocolate cracked horribly when I cut into them that I can't even serve them because they look awful. The chocolate cracked and fell off the cookie Any tips on cutting them so the chocolate doesn't crack, I put vegetable oil in it. I used a serrated knife and it cracked horribly.

    Rubber spatula with a little cooking spray will make spreading the batter in the pans easier.

    y have this recipie witten wrond u say 8oz of butter that equalls to one stick and in this video that is wahy more that one stick. im gonna have to try somone elses

      8 ounces is equal to 1 cup, so 2 sticks of butter, as shown. Each stick is 1/2 a cup.
