I have made a batch from another recipe, because I didn’t want to flatten all of the dough balls at once, I stored them in a container in the fridge. But as you said, because they were cold, the dough was disintegrating the next day.
There is no oil in my recipe however ‘ghee’/clarified butter is suppose to go well! As for storing the dough you can refrigerate for 24 hours by kneading the dough until soft. Grease over the dough lightly with a little olive oil or ghee and wrap snuggly with a cling film or foil before placing into a air tight container. I hope this helps. When you first take the dough off the stove it is crumbly. Taking time to knead well should bind it together! In the case it is dry, dip your hands in cold water or sprinkle as you knead. For the best results knead when it’s hot/warm.

Too much water can make the dough sticky. You can try kneading with a little rice flour sprinkled on top to absorb the moisture.
