I use Nature's Way because it's cheaper in my country, in Europe. But use any brand. I take 400mcg every day. Also, 600 mg of vitamin B1 has helped me with chronic fatigue. People with Hashimoto usually have leaky gut, adrenal fatigue, slugish liver, so make sure you heal those too. Do you take medication (levothyroxine) and if yes, how much? I'm curious.

I have not used coconut flour at all. So I am not sure. Bt have you tried millets like finger millet flour or pearl millet flour? you can make this with millet flours.

Because of some medical condition I find it hard to gulp down anything that is even a little dry and/or rough. I am using regular rice flour. I have used organic brown rice flour from wholefoods, I feel that flour is little coarse , so i feel the consistency of the flower should be fine, and while making the rotis if you feel the dough is hard you can add some water and knead it well.
I tried making this today and I FAILED miserably. Is that glutinous rice flour? I even put the water to rice flour ratio 1:1 still dont know what went wrong.
I tried this recipe, but my roti never 'popped'. A few of them I got small air pockets, but most didn't puff at all. I thought I'd followed the recipe for the most part. What could be causing this?

+Tara N actually it should not, the reasons I can think of : 1.grease the skillet before you heat, that should be enough, also if the skillet is very very hot at the beginning this happens, you reduce the flame and bring down the temperature. Hope this helps,

Most of our (south indian foods) are gluten free, don't use hing/asafetida(it has gluten) and ghee. Rice is gluten free, regular dosa with rice, urad dal and methi seeds , rice idli is gluten free. anything with lentils like sambar (skip hing) rice rotti with veggies...there are so many healthy dishes which are gluten free. for the better binding of rice flour we have to prepare this in a hot boiling water. Warm water does not give the wanted consistency to the dough

mostly this is soft roti, but depends on the rice flour. So some times it is hard. But with sambar it should be ok.

Why are you using the back of a spoon or ladle to mix it? Why don't you use the end that's made for mixing?

Get a non stick roti pan..and keep the flame high all the time..this worked for me..the rotis just skid over the pan swiftly
