I cooked similar recently but at the end I removed the ribs and used a hand blender to turn the carrots & celery into an even thicker dark gravy. I also used onion at the beginning. Mine was great too! 😊

Almost every one of his recipes is slightly under-spiced. The pinch of salt he threw in while sautéing the veggies was not nearly enough. Next time, I will season the short ribs before searing and browning. The other thing is...make sure you have enough liquid. Four hours is a long cook and I would have liked a little more gravy. For me, I think I'll do half water and half beef stock to get a little more seasoning.
