Tamale Pie with an Extra Kick -- Best Fast and Easy Recipe -- Jiffy Corn Muffin Mix
Tamale Pie
Ingredients
1 pound lean ground beef
1 onion chopped
1 can diced green chilis
1 can rotel tomatoes
2 cloves garlic minced
2 tablespoons taco seasoning
¼ cup water
¾ cup enchilada sauce
2 cups cheddar cheese shredded, divided
Topping
1 box corn muffin mix 8.5 oz
½ cup sour cream
½ cup corn kernels canned, fresh, or frozen
⅓ cup milk
1 egg
green onions and tomatoes diced for garnish
Instructions
Preheat oven to 350ºF.
Combine beef, onion, green chilies, rotel tomatoes , and garlic in a cast iron skillet.
Cook until no pink remains. Drain any fat.
Add taco seasoning and ¼ cup water.
Simmer until water evaporates.
Stir in enchilada sauce.
Put meat mixture in a 9 X 13 dish
Top with ½ cup of cheese.
Combine corn muffin mix, sour cream, corn, milk ,and egg.
Spread over the beef mixture.
Top with remaining cheese and bake 30-40 minutes.
Garnish with green onions and tomatoes and serve.

I'm not sure, but you could just mix some regular cornbread to put on top.

@@jeepgirl6814 they have all different types but I like Goya the best and their cheese slices aren’t crumbly and the melt well too they also have plant based meat products the pretty good also but there are other brands that are good also so happy searching for the ones that suit your needs the best 😊😃
