    🍪 COOKIE NOTES 🍪
    None of the cookies turned out cakey like I thought they would be from the look of them. They have plenty of sugar and fat, so no cakey cookies here.
    One of them was especially chewy and gooey. My favorite :)
    I tested the winning recipe again to make sure I really did love it. I actually made a very exciting addition to the recipe, and now I think they are the best chocolate chip cookies. Recipe on my blog sweetpotatosou...

    Flax wins for sure, and don't chill it overnight.. and definitely don't roll it into a ball. Scoop it directly when the batter is made.

      @@yassine8935 There's no apple taste if you use unsweetened and here's an exact ratio that you are supposed to use to replace eggs Replace one egg with 1/4 cup of applesauce in sweet desserts. If you want a lighter texture, add an extra 1/2 teaspoonful of baking powder, as fruit purées tend to make the final product denser than the original recipe.

      Have you considered using erythritol? I don't have diabetes but use it often because I honestly can't discriminate between it and white sugar.

    Awesome. Thanks for that.
    Next time, try to beat the aquafaba until it reaches peaks.
    Its optional, but you can add a tsp of vinager per 120ml of aquafaba and that will help the aquafaba to stabilize when baking.
    Just beat that the same way you would beat egg whites. It takes a little more time but it gets there.

      She does substitutes mainly due to Animal Cruelty in factory farms and maybe some for her health as animals health. Unless if u mean that u just exclude the egg and they still are good?

    I use a slightly different flax egg (1 Tbsp ground flax + 3 Tbsp hot water), but it's my standard for cookies, muffins, quick breads, etc. I have great success with it in that kind of recipe. I keep saying I'm going to try aquafaba with some recipes that need more of a meringue-type texture. Flax is never going to give you that.

    I've used aqua faba but I whip it up into a meringue first. That might help your cookies to spread more.

      I do the same when I make baked donuts, just fold in the meringue gently and it should give them a great texture!

    My favorite cookie recipe is Ovenly's secretly vegan salted chocolate chip cookie recipe. There's no egg replacer or butter in the recipe, which means that I usually have all the ingredients at home 😅
    The cookies spread nicely and are delicious even without the extra salt on top.

    Yes. I love these types of testing videos. Could you do one with different toes of flours? Like is there a real reason to use buckwheat flour instead of plain flour? Also to use chickpea flour is “better” for protein content but does it change texture and taste? great video thank you!

    I like chocolate chip cookies made with chickpea flour. No need for a egg replacement and tastes amazing!! Don't eat the cookie dough though...uncooked chickpea flour leaves much to be desired.

    The aquafaba cookie dough is best rolled and baked 30 min only in the refrigerator. Not over night. They do get hard and are not the same. They need to be made right away, after they have chilled for 30 min in the refrigerator😘

    You can also use psyllium husks to replace eggs, and it works wonders!

      @ylva 7 nope, it's made from psyllium husks. It's not flaxseeds. In my opinion it works better, especially for cake doughs.

      @@NatalieWisler I think it’s because when they process the grains into the flour it’s not cooked, so you have to cook the flour yourself to get the bacteria out. Apparently there have been a lot of cases of E. coli from flour 🤢

    my mom and I have gotten these dash mini waffle and bundt cake makers. We love using the nora cooks recipes for vegan waffles (vegan gluten free version is the easiest) -- would love to see you play around with substitutes for flours, milks, or eggs.

    Flax seeds have been my favorite egg replacer for all of my 14 years being vegan. I have tried many egg substitutes but flax seeds always wins.

    I use flax or applesauce. I make awesome peanut butter cookies that taste just like my grandma used to make with a traditional recipe and just use flax for the eggs. For my flax eggs though I use a rounded tablespoon of ground flax and 3 tablespoons of warm water per each. The cookies turn out crispy on the edges and bendy chewy. They just don’t hold the hatch marks, but the flavor and texture is just like my childhood. Great video. Loved the music. 💚

    6:58 I was wondering if the ratio of flax-to-water was not to high in your flax egg. If the dough was sandy, maybe it needed a bit more water/plant milk?

    Thank you for doing this fun video! I usually alternate between our family favorite oatmeal chocolate chip recipe and new chocolate chip cookie recipes I come across. We always have cookies in the freezer! My favorite egg replacer for these types of cookies is flax as well, and my favorite vegan butter is Miyoko's Creamery.     I loved this thank you. I make hummus all the time and throw so much of the water away. My son loves cookies so even though not the best I will try to make it work with the left over water from chickpeas.

    You gotta smash em down a bit before baking if they won’t have that butter spread, and especially if you frig/freez em! I usually make the balls, then freeze those, and then bake from frozen. But with butter, they spread perfectly. I’m gonna modify the doubletree recipe cookies (my favorite!) to vegan, and was gonna try the flax seed method first. I’ll let you know...

    The thing you call aquafaba is the chemical sludge water left over in a can of black beans it's mostly salt.and water.

    Thanks for the inspiration. About to make some flaxseed cookies because they create a nice consistency. I think if you put one of each onto the baking tray and use the same volume of liquid it would be a better comparison as they would also have the same amount of cooling time.

      I wondered too, especially as they chilled overnight, or leaving them out of the fridge longer before cooking.

      That's what I'm wondering. If they go in sooner, they might spread more. Also even if they are sealed, I wonder if chilling it gives the flour time to suck up the moisture, also keeping them from spreading. And maybe to just gently flatten them a little too since vegan cookies sometimes don't spread.

      from what i understand, generally you only need to chill cookie dough for 30-60 minutes if you want them to spread out less, since chilling the dough alters the temperature of the fat content. since she used coconut oil, which is solid at room temperature, AND chilled the dough overnight, that's probs why they barely spread. maybe not chilling this dough could have made it act more like chilled cookie dough containing a more liquid oil. still looks great though!

    Make It Dairy Free have a good and easy recipe for choc. chip cookies. Tried it and the cookies came out gooey on the inside, crispy on the outside. And the most important, they spread like they supposed to.

    My wife uses aquafaba that we make at home when baking and it's sooooo good. We don't do oil, gluten, or white/brown sugar though... she can substitute for the oil and dates for the sugar (or rice syrup) but the gluten is SO hard to bake without. I do happen to absolutely love one polenta cake that she made... but once you get rid of oil gluten and sugar it gets a lot harder to bake! It's fun to experiment with her. oil free whole food plant based and gluten free chronicles.

      Ingredients.
      2 1/4 cups of polenta
      1 cup almond meal (can be replaced with other gluten free flour for a more fluffy texture)
      1/2 mashed banana
      3 tsp baking powder (15gr)
      3/4 cup brown sugar
      2 cup orange juice (the better the quality better the cake)
      1/2 cup apple sauce
      1 tbsp chia seeds
      SUPER EASY
      Preheat the oven to 180c / 350f
      Mix all the ingredients very well until it's creamy and pour into a lined 9" x 5" baking mold.
      Bake for 50-60 min until it's hard to touch, if you put a fork through it will still come out with some grits as the polenta is a bit grainy. It should feel firm and with a dry top.

    girl... Just FYI I found some "Nasoya" Non Egg Vegan Egg Roll Wraps in Albertsons today. First I cooked up some Jamaican styled red & yellow cabbage & onion with one curry bullion along with other jerk type spices and cayanne pepper because I like my food spicy, well after the cabbage was done it was bomb alone but since I had the eggrolls I wrapped a few and fried in shallow pan of avocado oil... when I tell you I couldn't even wait for the damn things to cool off I am not joking they were slap yo momma good. Please try it I know it will become one of your favs.
