    I'll be honest.
    I'm not a vegan.
    However, I'm not afraid to explore.
    Last weekend, for grins 'n giggles, I veganised a waffle recipe.
    I subbed flax eggs for the yolks, and aquafaba for the eggwhites. It worked a treat

    I’m new to baking. This year I set a goal to learn baking, more importantly vegan and preferably free of refined sugar. In three months, I have learned basics of “why” in vegan ingredients, replaced frustration with curiosity. Now I have come up with three of my own recipes once I learned how ingredients interact in baking. I’m loving my baking failures more than successes, because failures leave me curious to keep trying.
    Most of my failed recipes were from bakers with glorious websites and with good reviews that they responded to, they don’t respond to my comments or questions when the recipe fails despite following instructions.
    I like your humility. Thanks for being empathetic.

    I love this video! Informative and hilarious. Instead of veganizing recipes, I use already-vegan recipes in vegan baking books. My two favorite authors are Fran Costigan and Isa Moskowitz.

    This video rings so true. I like my cake nice & fluffy. Banana doesn’t do it for me as an egg replacer or as a binder. If anything it makes my chocolate cake super dense. However, i do take some tips from Chef AJ to make healthier dessert.

    I agree on what kind of baker are you, making it "healthy" or making it vegan. To me ,dessert is a treat. If it is healthy too that's fine, it's a bonus, but I'm all about the treat.

    I’ve been vegan for about 13 years now and I’ve had a a couple dozen amazing vegan pastries across America, so I know they’re possible, but their techniques seem secretive because I haven’t been able to figure them out until I started getting frustrated and experimenting on my own. This video reminds me of the frustration, but also reminds me it’s not just my frustration, nor are the great vegan pastries out of reach.

    Good video! I think a mindset shift is very important to getting on the path of developing good recipes and becoming a competent baker. It is very easy to get frustrated, but stepping back and looking at the "why" is so important!
    The other day, I was developing a recipe for Blueberry cake. After my second attempt, I finally realized that the pureed blueberries I added to the cake were adding some acidity and moisture, so I added a little more baking soda to help balance out the pH and I cut the milk amount down a touch. As a result, I got a better rise from my baking powder and soda and a less runny batter. Worked like a charm. If I didn't think about what to change or examine each ingredient for what it contributed for the cake, I wouldn't have arrived to that conclusion and end product!

      YEEESSS! Omg that is exactly what I try to get people to understand all the time. It's not as simple as take one thing out, add another one in. You have to understand the chemical reaction that's happening when you bake so you can fix it properly. It's not always easy but it's the only way. Glad to hear the blueberry cake came out in the end! :)

    I just discovered your chanel through this video and I'm SOOOOOO excited. I'm getting back at baking (I quit when I turned vegan 5 years ago and got frustated with tasteless cakes). This is the first time I come across an english-speaking channel so technical about baking, and this is so promising.
    I'm trying to learn from Bérénice Leconte (author of "Patisserie Vegan" and founder of VG Patisserie, first ever vegan baking shop in Paris) and so far so good.
    Can't wait to learn more tips for you, I just want to binge all of your videos !

    Holy 🤬! This video was EVERYTHING! This is the first video of yours that I’ve ever watched and I’m immediately hooked. I love your authenticity and honesty and you think just like me… Even down to wanting to own a vegan restaurant without experience 🥴 hence why I searched what I searched and found this video. There’s no coincidences that big. All I can say is Thank You!
    Edit: ok, I just watched another of your “expert tip” videos and I have to tell you, these videos are flaring up my anxiety big time. I need you to title these types of videos “research tips”. There’s no answers past, “do your research”.     Thank you for sharing this! My wife has a gene mutation that makes cooking for her difficult. I have been searching for some sound advice, and thought I'm not vegan and probably never will be, I do take cooking seriously.
    I face the additional challenge of baking with a wood stove at a high elevation, so I appreciate sound information.

    I just subscribed.
    I can concur that unless I’m making banana 🍌 bread, muffins, or pancakes,
    Bananas 🍌 will fail miserably as an egg substitute!
    I’ve been taking my plant based cooking more seriously and also had to search out the way of ingredients.
    My baking has improved.

    This is a great video!! Understanding the why is soo soo important I love that it was the first tip. One of my personal favourite substitutes for a light an fluffy cake/ cupcake is soda water! It kinda sounds like you have a bit of a vendetta with banana- though completely understandable, there are many better subs out there

      haha a banana vendetta sounds like the silliest thing on the planet but I guess I really do have one! I guess I'm just traumatized by all the awful recipes I tried when I was first starting out that would use a banana as a replacer. I actually have never used soda water but I've been meaning to try it! I love baking soda and vinegar. Maybe I'll do another video comparing both...

Can you please do a video on substitutes for milk powder and condensed milk? I want to include some Indian sweets in my menu and most Indian sweets consists of milk and butter.

    I wish I had discovered you back when I became vegan!!! So many bad baking videos out there…so many failed attempts. My go to for cake recipes has been Gretchen’s Vegan Bakery. I used to follow her before I went vegan. She went vegan, and veganized all of her bakery recipes. Some honorable mentions…Nora Cooks, Connoisseurus Veg, and the Viet Vegan for her sourdough recipe.

      Could be a few things! I’ll make a video in the future addressing this question because it’s so frequent. My first guess is that you’re using a bad egg replacer.

    Yes! So many internet vegan 'bakers' out there offer shit recipes and half the reviews are like, why did my cake turn out so heavy - well, the 'baker' responds, you probably used the wrong flour or stirred it too long. No!
