Another way to bombil fry receipe - redchilli powder,turmeric,salt ,green chutney(garlic+ corriander leave n chilli blent in mixi n make a paste) coat these ingredient to bombil .and at time of fry istead of rawa n rice flour coat wit garam flour.n deep fry.its so crisp n yummuy
You have not washed the fish ! You have just wiped with tissue paper ! Bombil is very soft and moist fish and releases water after applying masala. So when the whole fish is slit and washed, it becomes more moist and the the crispiness is for a while.
Then you might not have removed the water from fish properly. The best way to remove lot of water out of bombay duck is to keep पाटा over flattened bombil for half an hour or so. The weight over it will help draining out lots of water and bombil will be fried crispier.
