I used the American one but the light in the video just made it look like that and it depends on how you knead it. It will be good white dough if you knead it well

If you watch the video, the first batch you mixed, kneed, cover and let it rise for 2 hours than you take out the first batch and add the 2nd batch of flours and ingredients.

My dough came out too dry not pretty and smooth like yours. I think I might have too much flour. My yeast didn’t rise fluffy either. I’ll give it another try.
Hey, sorry it didnt turn out well for you. I don't like to use cup measurements, it is less accurate so it might cause the dough to be too dry. So I made another video with grams measurement, hopefully it will help

If your dough is not stretching, then it's probably the yeast didn't activate yet. Sometimes, it takes longer for the yeast to activate.
