As a Hungarian I can tell you that a Mangalica is also a lard pig. Fat back (pure fat) from Mangalica is a real thing in Hungary. Smoked to perfection, on soft bread is a heavenly breakfast for hard workers!

I don't eat pork anymore but I remember how it tastes. I totally understand what you are saying about the taste difference with the hogs you raised to eat. My mother went on a wilderness survival week in the palmetto swamps of Central Florida in the '60s with just a jackknife. While out they wove a rope trap from available flora fibers. Their goal was to catch dinner for the group. Instead, they caught a 500lb wild hog. Everyone got wild pork to bring home and the taste difference was astonishingly wonderful. I would guess the difference you experienced was equally the way they were raised and the breed.

I love seeing you work with these heritage breeds - there's more time put into them but it sounds like they're worth it! Also, Meg's comment about not really liking pork much but loving the guinea hog meat was so interesting to me because I'm not that keen on pork either.... makes me think I've got to try some heritage breeds instead of supermarket stuff! Maybe there are pigs in my future after all.

I am so happy to come over from Jess and Miah farm to follow you. Also I am very happy to see you raising Mangalica koca. I was born in Hungary and I am very proud of the Hungarian breed. If you ever need recipes just yell out. But one I need to share straight away. Slices of pork shoulder hit it with metal meat mallet until you break up the texture than sprinkle with Hungarian paprika salt pepper pressed garlic. Let it sit on top of each other overnight in the fridge. Next day on open grill fire coock them slowly. As you are coocking put some lard on it. "Jóétvágyat" Bon apetite😊😊😊

These pigs look like the now extinct Lincolnshire Curly Coat. I checked online and sure enough, they were exported to Russia and Hungary where they were bred with Mangalitsas. So you may have a bit of two of the oldest breeds around, from Hungary and Britain. Love the long history of selection of these breeds whilst keeping true to their nature - not so keen on modern breeds selected to extremes purely for consumption.

At 7 months after bowel head and skin where removed they weighed 250-217- 206 and bacon was amazing as well as at least 10- 15 lbs of lard each and that was left over after heafty portions where left on all cuts. These where grown Augustus to March in northeast Louisiana. beautful meat. Know what you mean about the colour of the meat in the supermarkets - last time I was in the US I could not tell what animal the meat was from by the colour and was amazed by the "manufactured meat" look of each identical cut shape and size! In Australia you know by the colour (and shape) what animal the meat is from and you are unlikely to get two cuts the same size or weight - and though the shape of each cut is similar, there is not the sameness you see in the States. In many of the meals I bought right across the US, there was so much spice and/or sauce it was hard to taste the actual meat. Here at home we tend to let the delicious taste of the meat rule. I guess that's a great reason to raise your own! :)
