I am deaf person. To find recipes in youtube, when no one's talking - my biggest discovery. It's so relaxing and hygge to watch. Can't wait to try. Thank you so much, Peaceful Cuisine
The detail in this video is impeccable. The sounds, the editing, the clarity. I could watch this a hundred times. Something about it is so calming. Thank you :)
How did you learn all kinds of skills like making potteries, building shelves, soba noodles like professionals without using the pasta machine! I adore and respect you so much! Please keep up your amazing work✨🙏
Its a Japanese Udon Soba Noodles Knife its also called a Cleaver Noodles Knife. It was designed especially for the purpose of cutting the dough into very thin strips in order to make the noodles, obviously. XD BUT DAMN DO I WANT THAT IN MY KNIFE SET!!!
You are amazing, I so wish I could make this!! Anyone else amazed by the fact that he's 1. not wearing an apron, 2. wearing a black shirt & 3. handling so much flour and not making a mess on himself!?
The lack of music works well with this video because there are a lot of steps that are audibly and visually satisfying. I don't think it would work as well for recipes with simpler processes like bread or deserts. Anyway, I really liked this video. Well done!
ChairmanChairman I totally agree with you. I was thinking adding music on this soba noodles video but when I started editing, I realized this video didn't need any music.
Oh god I was struggling SO MUCH to find someone who cooks traditional japanese dishes, plus this is so nicely filmed and edited (the fact that you didn’t add any additional music is so so relaxing) Thank you for such amazing content !
Hi, I'm French and I love your videos! I really like the "no music" style in it, and the fact that we can hear all the kitchen's sounds. This soba video is my favorite. Could you tell me how is called the huge red & black bowl you used to do mizumawashi?
The quiet background with only the sounds of cooking is called ASMR. If you're interested there's probably more ASMR videos other there. Although I think he makes the best. So I just watch his over and over again.
Thank you for your work. I learn things about cooking from watching you. I enjoy watching your videos and I think it's nice to be able to watch the videos without music.
The huge red bowl is a beautiful contrast to the color of the dough being kneaded. The whole process was like a ballet in slow motion. Thank you, again you have made my day!
Thank you for this. I love "no music." I am Armenian. This is how my grandmother would make our very thin dough for paper-thin pan-sized noodles, layered in special dishes. It is so easy to forget this level of care and craft in making food
your vids are simply amazing..i like them very much ...no talking, no music...and great vegan recipes.....thank you , thank you..many greetings from nothern germany
This is without a doubt my favorite video of all time. I loved everything about it...the technique, the time involved, the craft, the perfectionist elements, the complete balance of masculine structure and feminine creativity. Thank you for taking your time to show the world this beautiful work of art. Love you!
XYChromatic Easily my second favorite series of all time, right behind Bebop and right before The Shield. Battlecry was a great game. Just wish we'd see a proper remake of Robotech: The Macross Saga, with the same voice cast and music but without the Robotech Masters nonsense..would make it a lot more accessible to new audiences. Tried to watch SDF Macross and I just couldn't deal with the horrible, horrible English dub and the music felt completely off. One of these days..
Battlecry was awesome. Faithful to the 'ol Robotech saga I used to watch as a youth in the 80's. And I agree, the Robotech Masters arc threw me off as well. However... ...I loved the design of Zor Prime's Bioroid, though. Rule #4720 of the Manga Handbook: "Enemy mecha, no matter how underpowered, must be of a cooler design than the heroes mecha.
I love your videos! I never knew that you liked to cook. I'm glad that you are branching from your usual science related videos and wanting to do something different.
I can't really explain how much respect I have for his skill. To roll out 100% buckwheat noodles is nearly impossible - it's one of those things where you're either a master or your not.
Watching you make the Soba was like listening to a Poem beautifully read or seeing a perfectly danced ballet. You made it look so easy but I doubt most watching you work your magic could not even come close to that level of perfection. Thank you for sharing your Soba making skill with us.
This video brings back memories of making soba in a small countryside town I lived in around Fukushima-ken a few years ago. The skill of the master there was phenomenal and the soba was the best I've ever had. Thank you for your great video man. Very artfully crafted.
The way you work, I find it very relaxing. I know the joy and peace of working in the kitchen alone in silence.. I discovered your channel today, started with bubble tea which i love very much. thank you for the wonderful content... it inspired me to polish what i know to do best... i love to cook but usually its the same thing most of the time... learning a lot from you. Thank You.
Japanese tools are so pretty. Even though Japan is quite a state of the art country I love how they keep on holding onto traditions. I mean it worked for thousands of years so we should keep it. I love the woodworking part of Japan the most maybe. But you can tell each tool was made with so much thought and love! I will try making this soba noodles so excited. Thank you for this!
Oh my goodness. Truly one of the most beautiful videos ever...and a lovely video for any genre. Your skills are truly mesmerizing and I am embarrassed to say I was actually moved to tears. (Knowing this is how it has been done generation after generation is like watching history preserved) Many thanks for your art and for sharing. BTW: the buckwheat you have is a lovely green beige...here in the States it's brown. Is this a specific type of buckwheat>?
here in UK 100% buckwheat is beige. what you may be finding is non stone milled whole grain buckwheat which has the husks and bits not fully ground up because that kind is mostly used by health conscience for making breads and stuff. For soba, you need stone milled buckwheat flour, it should be whitish beige and have a kind of nutty peculiar smell and be very soft and fine like cake flour
Brown buckwheat is roasted, that's it! Have no idea if they have this brown one in Japan. It is better for the side dish, the taste is more strong, but for flour green is better. I love both! And video is just cool!
Discovered this channel only this morning and I’m obsessed. How did I live without this all this time. Every single detail is so soothing and simply amazing. If anyone knows, I’d also love to know the name of the knife and the brush he uses to spread the flour on the dough! Thanks for the help!
Whoah! It feels like you're living in an uncivilized area, no noise from vehicles, dogs or whatsoever, just relaxing, ASMR-y sound from what you are doing! Be my sensei Ryoya! Lol. Your vids~sugoi!
This was the most beautiful twelve minutes of cooking I have ever seen. Without the usual talking that consumes my concentration in usual videos cooking has really become an art for me for the first time. I love that there is no music and the way you have shot the video, as well as the sound quality really makes it very craftsman/artisan like. I think you should do it this way going forward. Great job, bro!
I really like his calm movements. the sweet move in the kitchen, and the kindness with which you treat the ingredients and the final food. This would be an exceptional lunch (as opposed to those who prepare screaming and cursing). Then in the body we hear what we send down. thank you

Paulina, I absolutely agree with you
the part with shaping the dough into square is probably the neatest method I've ever seen.

you can just start with a small square, that'll make things easier...

Peaceful Cuisine what if i use normal flour instead of soba one? However that's one of my favourite video!
You can, but you will make "standard" Noodles. Soba are made with buckwheat flour.
Alberto Zaffonato ok
Thanks for the video, it's really inspiring.
It is possible to melt several different flour ? For example 250g buckwheat + 250g whole wheat flour ?

Perhaps this may make you reconsider. At 10:19 , you can see that he slices the dough, and using the knife, he moves the board ever so slightly.
Also you can see he doesn't cut them all evenly as one may assume. No one is perfect and skill comes from experience.
