French commis always shout, "Oui chef!" each time they're given instructions. And the team is called a brigade. I did the service at a château in Pomerol and the chef came out at the end of the evening and was cheered by the guests. It's super intense and shattering but really impressive to watch the brigade in action. We were running back and forth between the kitchen and the two groups of guests. Crazy night. I left at 3am and the chef was preparing the croissants for the next day.

Hey making pasta is just like making pizza dough for the restaurant I used to work at. I might have to try it out. I was one of the only couple people that knew how to make the dough and sauce so when we were crazy busy I would get to go downstairs and make extra dough while everyone else got destroyed by pizzas upstairs haha.
Based on what I know about pasta science, you don't really want olive oil in your recipe, and you want to knead it longer than two minutes. Both of those help to create a greater gluten network.
