I swear this is the only episode where the owners and head chef are actually normal people. Gordon asks what’s the problem and one of owners said they have shit food. I swear no owner ever admits that
As a person in the industry who loves this show. Usually the chef is heavy at fault. It’s tough being a cook in an already broken kitchen with cooks who don’t give af. This was a rare episode. Hope the restaurant is doing good

Yeah, the title really don't do them justice. Even in the first 3 minutes they are already admitting to problems and are trying to fix them. That already puts them above and beyond the regular lot.
Scott was such a sweetheart honestly. Just a big guy that people thought was scary, genuinly cared and wanted to change.

Scott and Aaron are honestly my favorites. They care about this place and making changes to fix it up. They aren’t unreasonable at all
What ive taken from this series is that all it takes is one bad upper management person to tank an entire business. You could have the talent, you could have the work ethic but if one person is toxic or has a serious problem in their personality then the whole ship is gonna sink due to them.
I surely hope Chef Aaron is doing great. I hope he found a great restaurant/hotel to show his skills.

He’s been acting like a head chef since the first minute, just the bozos he’s in charge of don’t give a fuck & the bosses with the exclusion of Scott seemed happy for that to happen. Soon as Scott went in there and said Aaron is effectively your boss, if you don’t listen to him you can find another job….. magically they all began to listen.

Funny (sad) story. A cook at the restaurant I recently started slumming it at didn't know what poached eggs were when someone ordered them. We take in a class of differently abled people and help train them for a potential future in culinary arts. The life coach for the group is also an ex chef and had to make the poached eggs for my "head cook".
poached eggs is when you boil the vegetables in a boil bag and then put a fried egg on it.

@@acey457 See, that sounds like you want sous vide vegetables, and a "hard" fried egg (just light oil in the pan). Poaching is more like boiling eggs to get deviled eggs or similar but already outside of it's shell. Instead of a high temperature to fully cook through; you use a lower temperature over a longer period just like you would a sous vide, but in a double boiler method instead. (Usually multiple small ceramic ramekins placed into the saucepan of simmering water, each holding an individual egg.)
Update on the restaurant:
Jack’s Waterfront closed in December 2010, which was around two years after the Jack’s Kitchen Nightmares episode aired on TV.
Shortly after the closure, it reopened under new ownership as Dockside Jack’s in March 2011.
However, it was permanently closed after a month and the three owners sold it back to the previous owners.

Mostly whenever Gordon Ramsay visited restaurants in the US they usually get closed. This shows that this show is for entertainment purpose only not helping people with their business.

When you have a kitchen crew like that, who refuse to communicate and disrespect the chef and their bosses, the best remedy is to fire the worst one, then there will be a couple that will quit but the rest usually fall in line. 20 years in the industry and that's how it's always worked best along with treating each other with respect and understand that we're human.

@@insideAdirtyMind i dont understand where the mentality of 'train to show off' comes from. your body improves with physical conditioning, movement is medicine. you're supposed to exercise and stay in shape and build muscle mass so you can go into your old age with good structural integrity and still be able to move around. its fine if you dont want to gain muscle and train for strength, or dont want to train at all. but please don't just assume other people are showing off just because you feel insecure about your body and i wont assume people who don't train at all are just too lazy to do so as opposed to not being interested.

Truthfully Scott and Aaron were the only ones who weren't the problem, and maybe the other bald owner who seemed to be helping in the front throughout. AJ was a waste of salary and contributed nothing while in the restaurant, and Aaron's kitchen staff was super inept. His son is to blame for spinelessly letting him drain 100k(!) knowing that AJ did nothing at all. The idea that they had to force out Scott from being involved is wild when you see during the show that he's actually competent and willing to do anything to help; he should've been kitchen and/or hiring manager. Aaron was decent as a head chef, but he should've seen much sooner that his staff was lacking and incommunicative. Better staff could've been in place before the show was even made, and chef needed Scott to come in and demand the respect for him. And if truly didn't have the authority to change it, I don't know who in particular to blame for using frozen seafood and dyed tuna while so close to the great lakes, but that's just ridiculous lol.
dried seafood is more hygienic than fresh also if you dehydrate a fish it will taste like dried fish fillet (dry taste) but once it's fully dry it will make good for a Dry chowder, dried fish chowder
If AJ is receiving one paycheck from the restaurant it would be considered petty theft. The fact AJ is getting $10,000 a month is absolute STUPIDITY

I was sad that only about 16% of Gordon's rescues save the restaurant long term. I realized though, that it's helped so many businesses. Gordon's practical advice to respect the servers, clean, serve fresh good food... he's guiding a lot of people.
Also, I love how he gets right in the bully's face. Cathartic for me.

And worth saying regarding the “decorative” fish in the small spheres on the wall. They are Samurai fighting fish. Historically, they were always kept in ponds like regular fish and brought out in the small bowls we see just for guests to *briefly* observe their beauty. Then they were returned to a big living space. That’s somehow been misconstrued.
It horrifying that that tradition has been misconceived to think those fish somehow can live in such small spaces.

@@jaycaldwell654 maintaining fishtanks is costly and time consuming. They have a dozen or so of these on the walls with what looks like internal filters. They were struggling to maintain a modicum of cleanliness. I can't imagine throwing these tanks on top of what they already have to deal with on a daily basis.

Yeah, and these are betta fish. Betta fish are tropical fish that need 5 gallon minimum tanks that are heated and filtered. These look like less than half a gallon plastic decorations with plastic plant ornaments and some rocks. Terrible for the fish and a lot to maintain with water changes needed constantly due to not having a filter. It's inhumane, but there is a lot of misinformation about betta fish.
A bar I used to work at as a night cook would have a tank of exotic fish and eventually stopped having it because on weekends, drunk people would pour a shot or two into the tank to watch the fish get drunk and eventually die. The owner must've replaced the fish in the tank at least three times before he finally gave up.

i have only worked in 1 restaurant and it was for a very short time before covid hit. there is no way the staff would’ve ever treated each other how they did here. i’m so glad they booted 2 of them. especially the guy saying f*ck you to aaron. you can tell aaron has a passion for his food and service

Chef Gordon Ramsay is the person who actually can make miracles and pickup a business burried in the ground sky. Chef made me realized that no matter how small the restaurant is if you look it from a Michelin perspective it’s best for the customers for the staff and for the business.

That's sad for the fish (no, just because the beta fish came in a little box-like "tank" of water doesn't mean that's how they SHOULD live life) and that's also going to be a pain the arse to clean. All of those little bowls are going to need to be changed and cleaned regularly (notice there's no filtration in the small bowls, they're just open bowls on the wall with water) or the fish will die and the old water will smell up the place. It'd be best if they altered that after the fact to either be something that creates the illusion without the mess and fishprison or just got rid of that feature altogether. And the betta fish can be moved to better tanks and/or rehomed.

My Greek grandfather owned five restaurants in the Bay Area. He worked from 5am to 12am every day no days off. My father hated the restaurant business because of it. My grandfather always told me never open a restaurant. You won’t be successful in food unless it taste good consistent and great customer service clean and you never leave. That’s the life of a successful restaurant owner.
